neopaganism, judaism, buddhism, hinduism... there are certain limitations of course because most religions have a few core beliefs that you can't really disbelieve without stopping being a part of that religion but generally lots of religions tolerate variation

Hinduism believes all faiths are a path to God. God is one, the paths are many. You can even be an atheist (called advaita). http://en.wikipedia.org/wiki/Hinduism#Concept_of_God
Other tolerant religions are the Unitarian and Quaker faiths.
