Olives should be picked when dark and ripe, but not over-ripe, as they bruise easily. Wash and slash each olive deeply on each side with a knife and place in large, non-metal containers. Pour a solution of salty water (4 tablespoons of pickling salt to 1 quart of water) over olives. Leave the olives uncovered and in a cool place.
Stir a little each day. Change the brine each week. Sample after the third week, and continue the process if olives are still bitter.
When they are no longer bitter, rinse the olives well. Fill screw-top quart jars 2/3 full of olives. Prepare a mixture of vinegar and spices: 1 pint water, 1 pint vinegar, 1 tablespoon of salt, ½ teaspoon oregano, 2 small lemon wedges, and 1 clove of garlic, and pour over olives.
Top with a ½ inch layer of olive oil and screw lid tightly. Invert the jar for a week. Store right-side up in a cool place. Olives will keep for several years.

While I'm not an olive fan myself, my husband is. The first link is to spicy marinated olives. The second is to just lots of olive recipes, with other stuff. And then this is one I do all the time -- and even I like it.
1 8 oz. bar cream cheese, softened
2 - 3 hard boiled eggs (you decide how much you want in there!)
handful of olives, chopped (you decide color and how many)
onions, chopped, if you want them
other spices / parsley / salt / pepper to taste
Mix it all together gently. Spread on your favorite toasted bagel and just *BLISS OUT*!!

not spicy but easy olive recipe is stuft olives. blend cream cheese(softened) and a little salt(less than big pinch) in a bowl and fill each olive(pitted and preferably large) for festive touch add food coloring to mixure!

CHUNKY TOMATO AND BLACK OLIVE SALAD
Fresh-tasting and colorful, this salad would go well with pizza bianca or calzones. It would also be delicious tossed with penne for a quick pasta salad.
4 large plum tomatoes, cored, cut into 3/4-inch pieces
1/3 cup brine-cured black olives (such as Kalamata), pitted, halved
1/3 cup very thinly sliced red onion
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 large bunch arugula, stems trimmed, cut into wide ribbons
Combine tomatoes, black olives and onion in medium bowl. Add olive oil and balsamic vinegar; toss to blend well. Season salad to taste with salt and pepper. Mix in arugula and serve.
Makes 2 Servings.

Spanish Chicken
1 frying chicken, cut up
½ cup olive oil (product #148)
½ cup chopped onion
¼ cup diced green pepper
1 cup uncooked rice
1 clove garlic, minced
1 28-oz can whole tomatoes (with liquid)
12 Garlic Olives Pitted (product #225)
½ cup chicken broth
1 teaspoon salt
1 teaspoon chili powder
¼ teaspoon basil
¼ teaspoon oregano
To Prepare Spanish Chicken
Brown chicken lightly in olive oil. Remove chicken from pan. Brown onion and green pepper in oil. Remove from pan. Fry rice in pan until golden in color, stirring frequently.
Add onion, green pepper, garlic, whole tomatoes, chicken broth and all seasonings to fried rice. Bring to a boil. Add browned chicken, cover tightly and simmer for 30 minutes until tender.
