1 ¾ oz Chinese mushrooms, washed and soaked for ½ hour
2 tbsp oil
1 tsp salt
Directions:
Remove the mushroom stalk. Rinse well under running water. Discard water.
In a saucepan, combine all the ingredients with 1 quart of water. Bring to the boil, lower the flame to simmer for ½ hour. Strain and retain the stock. Mushrooms may be used for a dish.

fry some onions and garlic and a load of any type of fresh mushrooms in a little oil and butter. Add water and some dried italian shrooms, boil for 15 minutes, blitz it with a blender then simmer until reduced by half, pass it through a fine sieve. Discard the pulp, hey presto sexy mushroom stock! Great for risotto

Italian "Star" Porcini Cubes are absolutely wonderful - available from any Italian delicatessen in Europe.
Or add some rehydrated dried porcini to the recipe above from foodreference.com.
The Epicurious recipes (above) for mushroom stock are not great (personal experience).
