Ingredients:
1/2 c. butter
2 oz. unsweetened chocolate
2 eggs
1 c. sugar
1 tsp. vanilla
3/4 c. all-purpose flour
1/2 c. chopped nuts (optional)
Steps:
1. Preheat oven to 350 degrees F.
2. Grease an 8-by-8-by-2-inch baking pan. Set aside.
3. Melt butter and chocolate together in a medium-sized saucepan over low heat. Or place them in a microwave-safe container and heat - 2 minutes at a time at 50 percent power - until melted (check after every 2 minutes). Remove from heat.
4. Stir in eggs, sugar and vanilla with a wooden spoon. Beat lightly until just combined.
5. Stir in flour and nuts.
6. Spread batter in baking pan. Bake 30 minutes.
7. Cool brownies on a wire rack. Cut into bars.
Tips:
Don't overbake the brownies. You don't want them to be dry and crumbly when they cool.
Vary the kind of nuts you use. Try almonds or pecans as well as the more-expected walnuts.
Try adding chocolate chips or white chocolate chips to the batter.

White Chocolate Brownies--FOLLOW RECIPE AS WRITTEN!!
1 stick of unsalted butter
8 oz white choc chips
2 large eggs
pinch of salt
1/2 c white sugar
1/2 tsp vanilla extract--best if use real vanilla
1/2 tsp salt
1 c all purpose flour
8 ox semi sweet choc chips
Preheat oven to 350 degrees. Lightly grease an 8 inch square baking
pan.
Line bottom w/ foil and lightlygrease the foil. Set pan aside.
In a heavy sauce pan, melt butter over low heat. Remove from heat and
add
1/2 white chocolate. (DO NOT STIR) In a large bowl, beat eggs and salt
(pinch) until frothy. (USe an electric mixer). Gradually add sugar,
beating
until pale yellow and a slowly dissolving ribbon forms when beaters
are
lifted. Add butter mixture, vanilla, and the 1/2 tsp of salt. Add
flour and
mix until combined. Still in semi sweet choc and remaining white choc.
Spoon into the prepared pan-smoothing the top w/ a spatuala. Bake for
30
mins. Cool before cutting. Yeilds 16 brownies.

2/3 cup evaporated milk
1 (18.25 ounce) package German chocolate cake mix
3/4 cup butter, melted
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup chopped walnuts

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
Melt caramels and 1/3 cup of the evaporated milk over very low heat, stirring occasionally until smooth.
Combine cake mix, melted butter, the remaining 1/3 cup evaporated milk, vanilla and nuts. Mix well and spread 1/2 of the batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 8 minutes.
Sprinkle the chocolate chips evenly over the partially cooked brownies. Pour the melted caramel mixture over the top and with a teaspoon drop the remaining 1/2 of the batter evenly over the top.
Bake at 350 degrees F (175 degrees C) for 20 minutes. Let brownies cool in pan then cut into bars.

These brownies kick butt if you like something different!
Mint Brownies
1/2 C. butter
2 oz. semi-sweet baking chocolate
1 C. sugar
2 eggs
7/8 C. all purpose flour
1/2 t. baking powder
1/4 t. salt
1/2 t. peppermint extract
1/2 C. Andes mints, broken up
Heat oven to 350° F.
Grease an 8 x 8 inch cake pan.
Mix together the flour, baking powder, and salt, and set aside.
In a saucepan over low heat, melt the butter and chocolate, stirring frequently until smooth.
Remove the saucepan from heat, and let cool.
Beat eggs until light. Mix in sugar, chocolate mixture, and peppermint extract. Mix in dry ingredients. Add mint pieces.
Spread in the cake pan and bake for 25 minutes or until a toothpick inserted in the middle comes out clean.
Cool slightly before cutting into squares.

4 ounces unsweetened chocolate
1 1/2 sticks butter

14 ounces packaged caramels
1/3 cup evaporated milk
Heat oven to 350ºF. Microwave chocolate and margarine in large microwavable bowl on high for 2 minutes or until margarine is melted. Stir until chocolate is completely melted. Stir sugar into melted chocolate mixture. Mix eggs and vanilla until well blended. Stir in flour. Remove 1 cup of batter; set aside. Spread remaining batter into greased 13x9 inch pan.
Sprinkle with chips and 1 cup nuts. Microwave caramels and milk in same bowl on high 4 minutes, stirring after 2 minutes. Stir until caramels are completely melted and smooth. Spoon over chips and nuts, spreading to edges of pan. Gently spread reserved batter over caramel mixture. Sprinkle with the remaining 1/2 cup nuts.
Bake for 40 minutes or until toothpick inserted into center comes out with fudgy crumbs. DO NOT OVERBAKE. Cool in pan cut into squares.

Don't go to all the trouble of making them from scratch, use the Martha White brownie mix. These taste just like homemade or maybe even better without all the work.

BROWNIES WITH CREAM CHEESE SWIRL
For swirl
3 ounces cream cheese, room temperature
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg
1 tablespoon all purpose flour
1/2 teaspoon vanilla extract
For brownies
6 ounces sweet baking chocolate (such as Baker's German's Sweet Chocolate), chopped
3 tablespoons unsalted butter, room temperature
1/2 cup sugar
2 large eggs

1/2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 cup semisweet chocolate chips
1/4 cup chopped walnuts
Make swirl
Preheat oven to 350°F. Lightly butter 8-inch square nonstick baking pan. Using electric mixer, beat cream cheese and butter in medium bowl until light and fluffy. Gradually add sugar and beat until well blended. Beat in egg. Mix in flour and vanilla. Set mixture aside.
Make brownies
Stir baking chocolate and butter in heavy small saucepan over low heat until smooth. Cool slightly. Using electric mixer, beat sugar and eggs in large bowl until slightly thickened, about 2 minutes. Mix in flour, baking powder and salt. Mix in chocolate mixture and extracts. Stir in chocolate chips and walnuts.
Spread half of chocolate batter (about 1 1/4 cups) in prepared pan. Using rubber spatula, spread cream cheese mixture over chocolate batter. Spoon remaining chocolate batter over top of cream cheese mixture. Using tip of knife, gently swirl through batter, forming marble design. Bake brownies until tester inserted into center comes out with a few moist crumbs attached, about 30 minutes. Cool brownies in pan on rack. Cut into squares.
Makes 16.
