You just have to memorize the genders of words ending in "z". There is no rule. For example, it's "la nariz" but it's "el lapiz". Fortunately, there are few of these words.
If the word ends in "s", add "es" sounds to make it plural. For example, the plural of "país" is "países". (In fact, you add "es" basically whenever the word ends in a consonant, except with a few borrowed words.)

All of the other posts are accurate; there is no way to just tell the gender of a word that ends in z. You have to learn it with the word. However, most words that end in a consonant are masculine. So if you have to guess you would have a better chance of guessing correctly if you go with masculine.
Please know that to make words plural that end in Z you must change the Z to a C and then add -es.
Example: el lápiz becomes los lapices
la nariz = las narices
la vez = las veces
el pez = los peces

That depends on the word, for example nariz is femenine "la nariz" and lapiz is masculine "el lapiz" you have to read and listen spanish to know each case because there are not rules about it...
When it comes to words ending in s you make them plural by adding the suffix "es" to that word

I don't know if this really helps but Lapiz is masculine & nariz is feminine. There are some exceptions that you won't know unless when you learn a word you learn the article along with it. Article is the La or El in front of the word. For example el lapiz or la nariz.
You actally add an -s to singular nouns ending with a vowel. If they end in consonants add -es. On the words ending in -z remove the z and add the proper -s or -es ending. The articles are el, la, los, las = the & un, una = a,an,one;unos, unas = some

The words that end with -z can are mostly feminine, but there are many exceptions...
la nariz- femenino
el lapiz- masculino
You also have la paz, la vez and el pez. You just have to learn these words and remember them!
Also remember that the words that are not decedent from Latin are considered to be masculine- el problema.
Femenino- words that end on -a, -cion, -sion, -d and exceptions like la mano, la moto
Masculino- words that end on vocals like -o and -e, and consonants
Masculino y femenino- words that end on -ista, -ente (periodista, delincuente)
When making plural with words that end on -s you keep them the same, they don't change. For example el martes- los martes.
And remember that when you're making plural, the place where the accent is stays the same.

The article makes the difference. In Spanish you have to say "La Nariz" which means The Nose or "El Lápiz" which means The Pencil. "La" is a feminine article and "El" is a masculine article.
