We use several things depending on what we are in the mood for.
2 cans cream corn mixed with one small can chopped green chilies and topped with cheddar cheese.(just enough to cover top) microwave until cheese is melted or two cans of your favorite re fried beans covered in cheddar cheese.Microwave beans for 2 minutes stir then top with cheese and nuke for 1 minute more. Or just some chips and salsa or guacamole. Hope you enjoy your dinner.

lime juice
chili powder
cumin

blackened corn and peppers
cook corn and peppers in a dry skillet (pref. cast iron), stirring, until starts to color. add olive oil, lime juice, salt, and cumin. toss.
jicama sprinkled w/ lime juice and chili powder is also good.
