The addition of milk is the main thing - though you may have already figured that one out ;-)

The main thing to good scrambled eggs is to cook them slowly and over med-low to low heat, stirring frequently. I used to cook them quickly, adding milk, water or cheese before putting in the pan. I often ended up with watery eggs. A few years ago I saw Julia Child on PBS with Jacques Pepin. They made the eggs I always dreamed of making. Low heat and going slow is the key.

If you like them creamy you can add a bit of sour cream (low fat or regular - I wouldn't use fat-free) or cream cheese (l-f or reg). BUT add it when the eggs are almost cooked through, and only a little. Maybe a teaspoon or less per egg. Also, a pat of butter at the end is good, too.

Good luck!

You are trying to make scrambled eggs that are fluffy, right? Here's what you do: Mix the eggs with a wee bit of water - never milk. Use a whisk and beat the eggs to incorporate as much air as you can. A hand whisk is perfect for the job, or a fork can work, but will take longer. Remember, the more you whisk, the fluffier the eggs will be. Once again, don't use milk because it seperates from the eggs as it cooks... Enjoy, Steve

Cook them longer. The longer you cook them, the more moisture is cooked out of them.

If they are getting burnt and still watery in the middle, you probably have the heat too high or you need to butter/coat the pan a little.

I scramble the eggs only and I don't add any other ingredients to it and they come out great, never watery. I put oil in my pan, heat the pan and then pour my eggs in it and scramble them.

Don't use any milk on them. And make sure your eggs are really fresh.

You need to add more oil or butter and cook them longer, until they start getting crispy.
