My grandma's two recipes for pickles. I had to hunt them down because my hubby just HAD to have bread n butter pickles. We prefer version 2:
Grandma’s Bread & Butter Pickles
Version 1
•9 cucumbers, about 7 inches long (sliced how you like I guess…one recipe says thin, but I remember grandma’s being about ½ - ¾ inches thick?)
•1 cup chopped green peppers
•1 cup chopped onions
Soak for 1 hour in 1 teaspoon salt (at least).
•1 cup vinegar
•2 cups sugar
•1 teaspoon celery salt
Drain soaked pickles, put in a sealed glass jar and store in the refrigerator.
Version 2
•7 cups of cucumbers sliced thin
•1 cup onions sliced thin
•1 green pepper sliced thin
•1 ½ cups sugar
•1 cup vinegar
•1 T canning salt
•1 t each celery seed and mustard seed
•1/8 t alum
Put in a gallon jar and keep in the refrigerator. Good to the last pickle. Can also add some chopped celery.
They are both good after a few days, better after a week.

OK, OK I took 2 days , but here goes: Also, it's not 14 day pickles anymore--it's one week pickles.

Economy pickles
I gallon sliced dill pickles
5 pounds sugar
Empty pickles into collander and drain and rinse. Wash gallon jar. Put a layer --3 inches deep--of pickles, and 1 inch sugar.
Alternate until all pickles and sugar are used. Put top on and refrigerate a week, before using.
DONE!

You can make a fresh relish with cucumbers sliced onions, bell peppers. Use red wine vinegar and sugar to dress let marinate for about 1to 2 hours and serve as a pickle side dish. Cucumbers with apple cider vinegar and salt are a traditional fresh pickle in the south.
Otherwise you are in for at least a two week wait on any kind of canned pickles.

Depends on what kind you are making.
I make Mixed veg pickles by cutting veggis like Carrots and Cauliflower and cooking them lightly in hot mustard oil, with ginger and garlic paste , brown sugar and salt and ceyene pepper till they get a little tender and then let them cool for 4-5 hrs and bottle them.. they are ready to eat next day

Buy some small cucumbers and some pickling jars. Go to the store buy those pickle making packets. Just follow the instructions and tah-dah....homemade pickles. I don't think it would take very long to make them

it takes three days.
The simplest one is the onion and carrot pickle.
Take small sized red onions and carrots too if u wish.
Also mustard seeds, any oil, preferably mustard oil is best for pickles, red chilli powder, salt, turmeric powder.
Just wash all the vegetables.
Heat a little oil to fry the mustard seeds and keep them aside.
Now take a air tight glass jar, and put all the ingredients together.
Keep it in the sun to cook. In three days it will be ready.
U can also add other vegetables too, such as mango, peas, or chillies and lemon cut into small pieces.

if i were you, id cut cucumbers in strips and leave them in a jar full of pickle juice for a week maybe.
I had two jars of pickle juice, one was store-brand one was vlassic. i love vlassic, so i took some store-brand pickles and left them in vlassic juice. they soaked up the flavor in a few days.

add all in large bowl, place in fridge for 2 hrs
