Be careful. Olive oil can suport the growth of botulism if you use whole garlic cloves and don't heat it all enough. Just make sure whatever recipe you use calls for heating the oil to a certain temp.

Flavored vinegars are much less risky, and still just as good!

go to amazon.com and search books- flavored oils, this will pull you up a lot of books you can buy to make the oils.
