Cracker Barrel Hashbrown Side Dish

1 (2 lb.) bag frozen hash browns, thawed
1 medium onion, finely chopped
6 Tbsp margarine, melted
1 lb. sour cream
8 oz. Cheddar or Colby cheese, shredded
1 can cream of chicken soup
Cornflakes, crushed
4 Tbsp margarine, melted


In a 13 x 9-inch baking pan, make single layers of the following: Potatoes,
onions, 6 tablespoons melted margarine, sour cream, Cheddar cheese and soup.
Sprinkle top with cornflakes. Drizzle 4 tablespoons margarine over top. Bake at
350 F for 1 hour or until bubbly and piping hot.

Corn in the cob with plenty of butter. Yummy.
If corn in the cob is not available, how about the packet corn wherein you just microwave them for a few minutes.
Either cut some tomatoes and serve it as it is or put whole tomatoes in the boiling water for a few seconds. Either that or grill the tomatoes.
Fry some chips, it'll be a nice accompaniment with the pork chops.

scalloped potatoes....homemade, not from a box!!!! Here's a reciepe for them::

preheat oven to 350

thinly slice 5 or 6 medium potatoes (peeled or unpeeled)
place them in a 2 quart casserole

melt 3 tbsp butter in a skillet and add 1 diced onion

cook onion for about 2 minutes and add 3 tbsp flour

mix completely and cook for a minute or so to get rid of the "flour taste" and then remove from the heat

Stir in 2 cups milk and heat to a boil. (I use a whisk to make sure I get out all the little lumps and I add salt and pepper at this point)

Cook sauce until starts to thicken, stirring constantly, and then pour over the potatoes.

Salt, pepper and dot with butter

bake uncovered for 1 hour
cover and bake for an additional 30 minutes

Corn, potatoes or sweet potatoes, roasted root vegetables, broccoli, rice, or buttered egg noodles are all very nice with pork chops. Cornbread stuffing (out of a box) is also great.

I bake my pork chops in mushroom soup topped with sliced potatoes and have corn on the side.

Mac & Cheese of course!! That's my favorite!! Corn and noodles also goes good with pork chops!!

I like curried basmati rice. Saute some minced garlic and ginger in a Tbsp or so of olive oil, add a cup of basmati rice and stir to coat for a couple minutes to toast. Then add 1 Tbsp curry powder and stir for another minute or two. Add 2 cups chicken broth, bring to boil, cover and cook for 17-20 minutes. (You can also add peas, bay shrimp, green onions, cilantro, anything!)
