They use a pitter. It has a punch in the center and is shaped like a loose-leaf paper punch. The punch pushes the olive pit right through and out again.

They use a big pitter machine. I watched one when I went Cherry picking last summer. It is pretty neat. But the real question is .. Who stuffs green olives with the pimentos???

with a little punch. notice the little "x" on one side and the hole on the other? they punch it out.
