That has to do w/ the exposure of the meat to oxygen. This is why many ground beef packages are sold in tightly-wrapped plastic and styro, rather than a package w/ space between the meat and the wrapping.

It is a normal part of the meat; it si still good if it is brown on the outside... it's still pink inside.

It's not harmful. It's what happens when the lights in the grocery stores hits the meat.

If it gets exposed to air & also how much red dye they use are factors. Ground beef just looks gross anyways.
