Put their full name and their title.
Mr. John Jones
Mrs. Cathy Jones
Dr. James Smith
Lt. George Smith
There may be people with the same first name. If it's a formal enough event to warrant place cards and seating arrangements, then you should be respectful of the person. This means using both names and their titles. The place card should read the same as the invitations.

Put both names. What if you have two people named Chris or Jane at the same table? You could put the first name larger than the surname if you don't want the surname to be totally obvious, but it should be there.

think you need to put both on there as it will cause confusion if you have two people with the same name .. you should also do a table plan for the event and place it at the entrance so that people know where they are to be seated and next to whom.

formal - use surname
informal - first names unless there are 2 or more of the same name. then you could do something like a couples dinner and do couples' names.

At least the first and last name, especially if you have two "Mike's" or something. It is proper to use the title too, like "Mr. Michael Smith."

weddings i have recently been to have both first and surname. in case you get somebody with the same first name!! they might get a bit confused.

You should just put both to avoid confusion. Make sure to alphabetize them also so it is easy for them to find it. Do that by the last name.
