Roman Rice and Beans.
Cook rice, beans (any kind, choose your favorite), and sliced carrots or other vegetable separately, then mix them when they are all cooked.

For the really quick version, you can use Minute Rice, canned beans and canned or frozen vegetables.

If you have more time, use brown rice, and fresh--cooked beans, which take 2--4 hours to make. [quicker if you soak the beans overnight in the fridge].

Lentils or green peas can be substituted for the beans.

Use a tomato--based sauce, or even cook the rice in tomato juice or V-8. Sprinkle with onion powder or garlic powder. Use MSG instead of salt. Mushrooms can always be added, too, fresh or canned, depending on how much time you have.

This is a versatile meal, which you can prepare very quickly, or put a lot of effort into it, and it tastes good. It's a "one plate"meal, too, with all the ingredients mixed together.

If you have non-vegetarians eating with you, you could add some cooked little popcorn shrimp or bacon bits
or even beef cubes, to their portion. And fried potatoes can be substituted for the rice.

A very balanced and high--protein meal.

Lac-to Ovo vegetarian or no animal products at all?
If you can use eggs and cheese the world is yours, other wise any recipe just use tofu in place of the meat (stews etc) and vegetable broth in place of any meat based broth.
