OK, take some tofu and sautee in a pan for 5 or so minutes in olive oil. In a second pan, start boiling water to make pasta (angle hair is best). After sauteeing the tofu - add tomatoes, onions, garlic. Mix for another 5 minutes and then add the pasta. Mix and then add fresh tomatoes and lots of basil. Great meal with a wonderful basil taste. Instead of tofu - I usually add shrimp....but won't work for you.

Ingredients:
3 cups rotini pasta
1 cup grated Parmesan cheese
1 cup Italian salad dressing
1/2 red pepper, chopped
1/2 red onion, sliced
2 cups broccoli, cut into small flowerets
1/2 cup black olives, sliced
Directions:
Cook the pasta and drain.
Combine the pasta with all the remaining ingredients. Mix together. Chill.

rice and beans is a good healthy, cheap veg dish. you can also try sauteeing vegetables with tofu. Vegetarian burritos, tacos, etc. are good too and can be really healthy if you up the beans and veggies and reduce the cheese. Pasta dishes are great if you reduce the amount of pasta and up the veggies. There are also a lot of great vegetarian soups that are healthy and filling (mushroom barley, potato, vegetable soup). If I were you I'd get a copy of a basic vegetarian cookbook and try to figure out some dishes that would work on a regular basis.

tri-colored rotini pasta (cooked of course) , cherry tomatoes or a tomato cut into smaller pieces, forzen broccoli and peas(cooked with pasta for last 2 min) shredded carrots. You can really use whatever veggies you like in this. Rinse pasta and veggies with cold water. Mix all in a bowl with Italian Salad dressing. Very quick and very good.

Fettucene cabonara its great and has bacon but you can take it out and you can eat it hot or cold!! this pasta is rated 4 1/2 stars so it is good all you need is
1 pound dry fettuccini noodles
4 eggs
1/2 cup grated Parmesan cheese
1 1/4 cups heavy cream
ground black pepper to taste

not sure if you eat tuna.. but if you do here is a really quick recipe for tuna pasta salad... boil the pasta, leave for about 10 mins to cool,( i use three coloured twists or wholemeal) add a tin of drained tuna, a tin sweetcorn (i like the small whole corns but kernals will do), then add some boiled sugar snap peas(nice and crunchy) normal garden peas will do if you dont have any of the others,then add some onions... finely chopped, mix in plenty of ground black pepper and salt to taste and finally stir in a large spoon of hellmans (extralight) mayo... my kids have always loved this even thou we are not vegetarians. you can add peppers too for some more flavour,colour and crunch, good luck!

This is what is in my grandmother's recipe (minus the salami, of course). It's good and easy, and stands up in the fridge for a few days - though you may need to add a little extra dressing or vinegar.
cooked short pasta
canned garbanzo beans
chopped pepperoncini peppers
halved cherry tomatoes
chopped red pepper
rinsed baby spinach chopped
minced red onion
one clove garlic, minced
shredded mozzarella
shredded basil
lemon juice
balsamic vinegar
low-fat Italian or Caesar dressing
I've also added lightly blanched broccoli, green pepper, frozen peas/corn, matchstick carrots, and other veggies.

boil a bunch a pasta - I like elbow for salads. Chop any kind of crunchy veggies you like. Salt and pepper it and mix it up with mayo. Make sure the pasta is really well drained. My fave combination is canned black olives, celery, onion and a can of tuna. (well, I'm not veggan.) The thing is, the only dressing that tastes good to me on pasta is mayo.
