I’ve only ever had these delicious deserts in yum cha restaurants in Australia – they are a yellow custard favour pancake that is served cold and wrapped around fresh mango and ice cream or cream. I don’t think they are actually cooked but they are SO delicious and I’m have been trying to find a recipe for years! Thank you in advance to anyone who could share this!

Dim Sum Recipe

1 3/4 lb. Ground meat (beef , pork or -mix of two)


-BASIC MIX


2 Eggs
3 tb Soy sauce (light -preferred)
3 tb Sherry
1 ts Grated fresh ginger
1/2 ts White pepper
2 tb Sesame oil
3 Chopped little green -onions
2 tb Corn starch
4 tb Chopped water chestnut
3 Clove garlic, minced


EXTRA CONDIMENTS


1 1/2 ts Red chili sauce with -garlic
2 ts Spicy brown bean sauce
3 ts Hosin sauce
1 ts Grated orange peel


WRAPPER
1 pk Wonton skins


In a large bowl, mix meat well with remaining BASIC ingredients. mix
until smooth. Separate mix into four equal parts. For each part, add
one of the EXTRA condiments -- mix well. To stuff the dumplings, put
about one overflowing teaspoon or pecan sized ball into a wonton skin.
Fold into shape. Possible shapes are purse , fish , chocolate kiss,
nurses cap, or whatever. Parts of the wonton skin that are sticking
out may get tough, so keep this to a minimum. Use a different shape
for each condiment so that you will know what is what.


To cook, place on top of lettuce leaf on steam rack ( the leaf helps
prevent sticking). Be very careful not to let them touch each other or
else they will stick. Steam for 20 minutes. Eat hot. Can be frozen and
reheated in microwave.

Chinese dim sum

1/4 c Mung beans, peeled and
-soaked for 4 hours
3/4 c Vegetable stock
1/2 c Blanched frozen or fresh
-peas
1/2 c Sliced and blanched napa
-cabbage leaves
1/2 c Chopped green onion
1/2 c Oven roasted and chopped
Onion
1/4 c Egg whites
1 tb Soy sauce
1 tb Minced lemongrass
Salt
32 Potsticker skins (rounds)

In a small saucepan, combine the mung beans and stock. Bring to a boil and simmer, tightly covered, for 30 minutes, or until the beans are soft. Transfer the beans to a food processor or blender and puree until smooth. Transfer the beans to a medium size bowl and add the peas, cabbage, green onion, roasted onion, egg whites, soy sauce and lemongrass. Stir to combine. Season to taste with salt.
To form the dumplings, moisten the edge of a potsticker skin with water. Place a scant tablespoon of filling slightly off center on a skin, fold the dough over to form a half moon, and pinch the edges to seal. Place in a bamboo steamer and steam for 10 minutes. Serve immediately.
The filling can be prepared and refrigerated up to 6 hours ahead of time.

*Note* Do not stack these dumplings while forming or steaming or they will stick together. Serve these dumplings with a small bowl of Manchurian Sauce, Chinese Barbecue (hoisin) sauce, and/or mustard.

MANGO PANCAKES

Pancakes made from flour, grated coconut, mango pulp and cooked rice and filled with mangoes and fresh cream.

Cooking Time : 20 min.
Preparation Time : 10 min.

Serves 4 to 6.

For the pancakes
3/4 cup plain flour (maida)
3/4 cup powdered sugar
4 tablespoons shredded fresh coconut
2 mangoes, pureed
1/2 cup coconut milk
1/2 cup cooked and cooled rice
1 to 2 tablespoons oil

For the filling
1 mango, chopped
1/2 cup fresh cream
2 tablespoons powdered sugar

For the garnish
1 tablespoon castor sugar

For the pancakes
1. In a bowl, combine all the ingredients except the oil and make a smooth batter.
2. Heat a little oil in a non-stick pan, pour 1 tablespoon of the batter and spread evenly to make a circle.
3. Cook evenly on both sides tilll golden brown.
4. Repeat this process for the rest of the batter.

For the filling
1. Peel and chop the mango into small pieces.
2. Whip the cream with the powered sugar till peaks form. Combine with the mango.

How to proceed
1. Spoon a little filling on each pancake and fold neatly into a semicircle.
2. Repeat with all the pancakes.
3. Arrange on a serving plate and sprinkle castor sugar over.
4. Serve immediately.

Sounds like crepes to me......wrapped with fruits and frozen custard, whip cream or ice cream.

Homemade Frozen Custard in Crepe Pockets

Frozen Custard:
6 eggs
2 c. milk
3/4 c. sugar
3 T. honey
1/4 t. salt
2 c. whipping cream
1 c. tiny dark chocolate flavored pieces
1 t. vanilla
Crushed ice
Rock salt
Frozen Custard: In heavy saucepan, mix eggs, sugar, honey, and salt together until well blended. Cook over low heat, stirring constatntly, until mixture thickens and just coats metal spoon. Cool quickly by setting pan in ice or cold water and stirring for a few minutes. Cover with plastic and chill thoroughly. When ready to freeze, combine chilled custard with whipping cream, chocolate pieces, and vanilla in 1 gallon ice cream freezer can. Freeze using 6 to 8 parts ice to 1 part rock salt. Transfer to freezer containers and freeze until firm.

Dessert Crepes:
3 eggs
1 c. milk
3 T. melted butter
3/4 c. all-purpose flour
2 T. sugar
1/2 t. salt
Combine all ingredients in blender; blend about 1 minute. Scrape sides with rubber spatula. Blend until smooth, about 30 additional seconds. Refigerate for 1 hour.

To Cook:*
Use a non stick skillet.
You do not have to use additional oil or fat.
Pour a little batter in the pan, just pour in enough batter so it will thinly coat your pan, tilt the pan to spread the batter evenly on the bottom of the pan Cook over medium heat for a couple of minutes until the bottom is light brown, flip and cook for a few seconds more Remove from heat and stack on a plate with wax paper between them.

Makes 12 servings of 1 crepe each. Place 1 scoop of custard in center of each crepe. Fold pocket style. Sprinkle with powdered sugar. Serve immediately.

I'm Chinese and I don't think I've ever eaten or heard of a mango pancake. Do you mean mango pudding? Or mochi ice cream?

Buy the tim sum or mango pancakes self four with the receipe( packing bag ).
