Quinoa is a vegetable that can consider to be a grain crop, a “pseudocereal” (it is a grain similar to other cereals but in fact it is of the family of the spinach and the beet, it is not a grass) that comes from the Bolivian plateau, where is cultivated between 3000 and 4000 meters of height. Is a species of goosefoot (Chenopodium) grown as a crop primarily for its edible seeds. Some big supermarkets sell it, or you can find it in health food shops like Holland & Barret (if you live in the UK).

It is a small, almost disc shaped grain, with a slightly crunchy texture. You can use it as a substitute for rice, or couscous or even bulgar wheat.

Its a grain (strictly a seed), that is a complete protein, it also contains a lot of Omega 3. It cooks and looks just like cous cous except it has a slight savoury taste rather than being bland. It is absolutely lush.
