I tried a boneless chuck roast, but it doesn't shred!

Try brisket-- it's what corned beef and pastrami are made of. Very lean, and kinda stringy.

Topside is the leanest, but can be a bit dry. I would go for blade- it's quite lean, and fairly tender. Corned beef and pastrami are made from the eye of a silverside. The round is also quite lean.

Ask your butcher. The best beef is sirloin.
