Try this one: I like to use buttermilk.
2 C sifted all-purpose flour
3 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1\3 C shortening (I like to use melted bacon grease)
3/4 C buttermilk
Sift dry ingredients into bowl. Add buttermilk and bacon grease. Be sure the milk is at room temperature and the bacon grease is well melted but not cold or super hot. Stir with fork, until mixed. Turn onto lightly floured surface. (I use a floured brown paper bag) Cheap, and you can just roll it up and throw it away when you're finished. Knead gently until melded together. You can usually feel when this happens. Roll dough gently, or pat it out, until about 1/2 inches thick. Dip biscuit cutter (if you don't have a biscuit cutter, use a small glass), in flour, and cut out biscuits. Bake on ungreased baking sheet for 10 to 15 minutes at 450 degrees in a preheated oven.
If you don't have buttermilk, you can make some. To 3/4 C of whole milk, add a tablespoon of white vinegar. Let this set for 5 minutes or so, and you will have buttermilk.
Put your biscuits on the middle rack of your oven. Check after 10 minutes to see how they are doing. They could be done. You may have to experiment with this process a couple of times before you get your biscuits just like you love them.

i am sure your recipe is probably ok. the secret to biscuits is do not overmix or handle. the more you stir and the more flour you add to keep them from sticking, the tougher they become.. try these here
2 1/4 cups self-rising flour
3/4 cup shortening
1 cup milk Combine and mix ingredients together. Pour out on floured waxed paper. Pat the dough out with your hands until dough is not sticky (add a little flour if necessary). Fold double. Cut biscuits with a biscuit cutter.
Bake on a cookie sheet at 425 degrees F (220 degrees C) for 20-25 minutes.

1cup (10oz) maida, flour 1cup, ghee 1 cup, baking powder 1/2tsp, powdered sugar 1 cup, cardamom 8. Mix ghee n powdered sugar in a vessal till light and fluffy. Mix and seive maida, flour and baking powder together. Then add this to the light fluffy sugar -ghee mixture. Make cardamom powder and add to mixture, after mixing everything well, let it stand for 15-20 minutes. Take small ball of dough, roll on palm of hand, flatten on palm of hand to a round biscuit shape. Make such biscuits of the remaining dough. Apply ghee to tray, place biscuits on it then cook in oven till well done. Do not remove from the tray, till they are fully cold as they could break. Instead of maida and flour, you can even take rawa and maida in equal amounts. enjoy
