Certain restaurants I go to I think the chef intentionally cook my food to a rare temperature. Is it insulting to ask for something well done? You're not eating it, just cook the food buddy and let me pay for it! I don't care what grade your tuna is, I want that fish crispy - not like you give me the bill and I say, nah, I don't want to pay 78 dollars, I think you would rather I pay 46. Thanks.

I'm not speaking specifically about fish - that was just a common example. And again, some of your answers just go to show that you just don't get it. You aren't paying for my food, your job is to cook it, my job is to eat and pay for it. You do yours I'll do mine. I'm not being ignorant either, and if they didn't teach you in your culinary schools, the customer is always right.

Those of us who took the time and spent the money to go to good culinary schools and after we graduated went to work for fairly long hours and low wages as we worked our way up the food chain, did so for one reason : We care deeply about creating and serving the highest quality food possible. Unless you've actually worked in a commercial kitchen you haven't got a clue as to how much skill is involved in creating and serving consistently great food.
So when a server comes back and says " Hey Chef I hope you don't mind but there's this AO that wants this perfectly gorgeous piece of tuna murdered . I hope you don't mind " Damn right I'm going to be mad. I care more about what you're eating than you do.
If you want to eat consistantly mediocre food why pay quality restarant prices ?

just watch out if you have seen some videos that show the cook spitting on the food to show you just how mad it made him to come back to him. I saw that on tv hidden camera also saw a bar tender peeing in a drink. if i'm paying fix it the way i want it if you pay for it then you can fix it the way you like

It's just too sad for us to ruin that beautiful tuna...it's so much better not cooked and it's safe(at least where I work.). Sorry, we have nothing against you. If you like fully cooked fish, I recommend salmon, tilapia, trout, flounder because they stay moist after cooking. Tuna becomes just too dry.

Because idiots in this country assume their way is the only way. Some food tastes best not cooked at all! We're so freaked out about germs and such, we forgot how to live.....

Tis better to undercook than overcook. you can always put back on the heat if its undercooked. if its overcooked your screwed.
