You have used something in your recipes on TV that sounds like "unduli" sausage. I am a senior citizen and my hearing is not very sharp so perhaps I'm not hearing correctly. Thank you

Andouille Sausage - A spicy, heavily smoked sausage made from pork chitterlings and tripe. French in origin, andouille is a specialty of Cajun cooking. It's the traditional sausage used in specialties like jambalaya and gumbo, and makes a spicy addition to any dish that would use smoked sausage. Andouille sausage is a Cajun smoked sausage, Delicious in dressing for stuffing turkey or chicken, or in a gumbo - it is very spicy but not hot. In the Creole/Cajun kitchen it used to flavor many dishes. My favorite is gumbo with chicken, andouille, shrimp and okra.

Andouli sausage is a hot spicy Cajun type sausage, good in gumbo or on the grill!similar to chorizo, a mexican sausage.
