i want to add various fillings to donuts but have no idea WHEN or HOW to add such fillings as pineapple blueberry etc. these are puree fillings. and what do i use to add the fillings. help please, my kids are driving me mad for home made donuts.

You can use an icing bag (preferably one with a long tip) to fill donuts. Once they are cooked and cooled, you can jam it in there and squeeze. If you don't have a pastry bag or icing bag, you can use a sandwich bag with one corner cut off or roll up some wax paper into a funnel, insert your icing and go. Be sure to squeeze slowly - at least until you get a feel for how much you want to put in each donut.

I'm sure you already know this part but I will mention just in case, you need to use a yeast based dough( no cake type dough for filling), in a pinch you can use frozen roll or bread dough, whether it is homemade or not ,cut with a round biscuit cutter. Let the donut cutouts rise until doubled and deep fry them . After they are cooled just a little insert the fillings into the donuts with the use of either disposable pastry bags (the kind used for cake decorating) with a large round metal tip or you can use a cookie press that has a decorating tip in the set. After filling the donuts dip the donuts in a glaze made of water and powdered sugar.

After you have fried your donuts, use either a pastry bag or kitchen syringe (turkey baster will work in a pinch). Insert the tip of whichever tool you use into the donut and pipe in some filling. You can use premade jams or canned pie fillings. If you don't have a pastry bag or syringe, just slice the donut in half life a hamburger bun and apply the filling to make more of a sandwich type donut. As soon as you get a hang of it, send me a dozen or so.

after the donuts have cooled, fill a pastry bag with the filling and use the tip to poke a hole in the side of the donut, stick the tip in there pretty good and fill them.

Donut shops have a machine that injects the filling... but a pastry bag will work @ home

Take a skewer to poke the hole in and give it a quick short slide left to right and then fill with a pastry bag until you see the filling just start to back up at you through the opening. Oh yeah, make sure the pastry bag is large and tightly twisted closed. If not, you end up with a gooey mess on you and the floor.

I think if you make donuts without holes... : ) and use a chopstick to poke a hole in the side and wiggle it around inside gently to make a space for the filling, it may help the filling not to squirt back out as easy. the pastry bag is the way to go.

once you have your filling made from whatever fruit you choose, put it in a pastry/ cake decorating bag and pipe it into the donut using one of the attachments used for especially for the job. its very simple and fun with kids for them to see the way it is done.
