you see your eyes pick up on a special kind of wave think of this wave looking like a rainbow but with more colors. the light refracts off these waves and when it gets to your eyes it looks like the color that the object is.( sky = blue)

has something to do with chlorphyl in the grass or something last I heard... the colour reflects, mixes with light and there you go.
Would make more sense if it were water reflections.. but hey..
