because beef is the most reddily available meat source, if you go down south it is alligator jerky or ostrich jerky. and if you go to the arctic it is seal jerky.

Beef jerky is most prevalent in stores, therefore it is consumed more. i believe beef jerky originated from scraps left over from slaughter. Beef is one of the most consumed meats...(never heard of chicken jerky =)) But my favorite is turkey jerkey, love the pacific gold turkey jerkey brand....in my opinion, its better than beef.

Actually buffalo was around long before beef. You know, "Beef, it's what's for dinner!!!" is recognized as America's meat of choice.
