Mayo can stay on the shelf for months but once it's open then you must put it in the refrigerator. Is it possible to put the mayo in an air tight seal and not have it spoiled?

Food requires special processing and sealing to keep it from spoiling. As soon as you break that seal, the food is exposed to all sorts of things in the air, from bacteria to mold spores. Putting an airtight seal on it at that point won't help, since the little buggers have already landed.

This precaution applies to foods that are apt to spoil once bacteria are introduced. Things like nuts, parmesan cheese, soy sauce can sit on the shelf forever, buy mayo contains eggs. It was sterile when packaged, but once the jar is opened, air makes contact and random bacteria will enter and multiply if it's not chilled.

Once the seal is broken, bacteria from the air have been introduced to the food and will cause it to spoil, even if you reseal the jar.
