Yes your skin does actually turn orange if you eat too many carrots. It happened to my cousin. Keep in mind, however, that the change in colour is only slight, like when you're green before you're about to throw up. The change is caused by carotene pigment. As for improved vision: this, Im afraid is merely an urban legend. Any other vegetable containing vitamin A will do the job just as well as carrots.

actually yes, this one is not a myth. Its the carotene in carrots that will change your pigmentation. However, you would have to eat a pretty massive amount of carrots for this to happen. In most cases the person is combining crazy intake of carrots, carrot juice, and supplements when this happens. The chances of it just happening to a person who simply enjoys the taste of a carrot and has a few sticks or so is very unlikely. Even a carrot a day should not make this happen! I would no worry about it. Also, its a slow process so you would sense it starting, AND its not permanent! So if you DO start to change color, just back off on the carotene veggies. Switch from carrot sticks to cucumber slices or something, and it will go away in no time.

I'm not sure about the claim to better vision but eating a large amount of any yellow vegetable-carrots, squash, will cause the skin to take on an orange tint. When my first son was a baby and I got the o/k to feed him veggies, I overdid the strained carrots, sweet potatoes and squash and he developed an orange color on his nose and face, which went away after the pediatrician said to go easy on the yellow vegetables.

It may or may not help your vision, if you get enough vitamins in other food. If you eat enough food containing carotenes you can get orange skin, but it takes huge amounts. In one case a guy lived on carrots and tomato juice for weeks, his wife didn't even notice he was orange, the change was so slow.
