I think it may be latin. It was on the grave marker of Agustus McCrae in the movie Lonesome Dove.

The sign in Lonesome Dove said, "Uva uvam vivendo varia fit." "Ova" and "ovam" would mean egg; "uva" and "uvam" mean grape.
But this is still garbled. It should be "Uva uvam videndo varia fit." That is a quotation from Juvenal that means, "A grape, by seeing another grape, becomes changeable," or more loosely, "When you keep grapes together, they ripen more quickly."
"Vivendo" means living, or by living; "videndo" means seeing, or by seeing.

I think you mean Uva uvam vivendo varia fit. It means "a grape changes color [i.e., ripens] when it sees [another] grape."
