Not just salads but main dishes, appetizers, etc. I'd love some ideas to pack for easy work lunches as well.

Tapenade Recipe Courtesy of Gourmet Magazine

Recipe Summary
Prep Time: 30 minutes
Yield: 1 cup

2 cups Kalamata olives or other brine-cured black olives (about 16 ounces)
1/4 cup extra-virgin olive oil
1/4 cup packed fresh flat-leaf parsley leaves

In a colander rinse olives. Working with several olives at a time and using flat side of a large heavy knife, press olives to crush them, and remove pits. In a food processor pulse olives with oil until coarsely chopped. Tapanade may be made up to this point 3 days ahead and chilled in an airtight container.
Chop parsley and stir into tapenade. Serve with slices french bread, crostini or crackers.

You can add roasted red peppers when making this tapanade and it is really good.

kalamata olives stuffed with a soft garlic and herb cheese ..yum!

this is sooo good. Very simple to prepare.

Why ruin them?? They are good on their own, or to compliment a salad. You can stuff them with almonds, marinated pearl onion and a host of other things - if you like - but I enjoy them just as they are.
