1/4 tsp. pimienta
2 dientes de ajo
1 1/2 tbsp. de harina
1 tsp. aceite
1 sarten de 10 pulgadas
1/8 tsp. oregano

Corte el pollo y pongalo a freir en un sarten de 10 a 12 puigadas. Tapelo y dejelo asi hasta que se le acabe el agua que suelte. Destapelo y fria por 5 minutos agregandole el chile verde y la cebolla, enseguida agregele el tomate. Muela las especias en el molcajete (comino, pimienta y ajo) y agreguese. Pongale un vaso y medio de agua y tapelo hasta que hierva. En una tasa eche la harina con agua y disuelvala agregandola al sarten y dejarla que se cosa con la comida. Agregue sal al gusto.

Pollo Guisado

Ingredients:

4 portions of boneless, skinless chicken breast
2 medium potatos
2 teaspoons of salt
3 tablespoons of sofrito
1 8 ounce can of tomato sauce
5 olives
2 bay leaves
1 teaspoon olive oil
1 ounce green bell pepper
2 cups of water
Procedure:
Place the chicken in a pan with ehough water to cover the chicken by 1/2". Add 1 teaspoon of salt. Cook at moderate high heat until the water starts to boil, then lower the heat to moderate and cook for 45 minutes. Remove from the heat and drain all the water. Let the chicken cool for approximately 15 minutes. Cut the chicken into 1/2" pieces and set aside.
Peel and dice the potatoes into 1/4" size pieces. Set aside
Dice the green bell pepper into 1/8" pieces. Set aside
In a pan add the sofrito, 1 teaspoon of salt, tomato sauce, olives, potato, green bell pepper, bay leaves, olive oil, and 2 cups of water. Cook at moderate heat until it starts boiling. Lower to moderate low heat and simmer for 20 minutes. stir once while simmering.
Add the chicken. Continue to simmer at moderate heat for 1 hour. Stir every 15 minutes.
Makes approximately 8 servings

1tsp. dried oregano
1tbsp. achiote tinted oil (See Basic recipes)
1 oz. salted pork (Our tocino)
2 oz. lean cured ham(Jamón)
1 medium onion, (peeled and chopped)
1 medium bell pepper, (Seeded and chopped)
2 sweet peppers (ajíes dulces-seeded and chopped)
2 garlic cloves (peeled and chopped)
4-5 culantro leaves (cilantro-chopped)
10 to 12 pimiento stuffed olives
1 tsp. capers (alcaparras)
1 tbsp. white vinegar
2 bay leaves (Hojas de Laurel)
1/2 cup tomato sauce
2 tsp. salt
1 lb. potatoes, (cut into 1-inch cubes)
2 1/2 cups hot water
1 can green peas (16 oz.)
1/2 cup of wine (And a lil for the chef)

Directions
In a heavy olla (Pan), heat the achiote oil on medium-high heat. Brown the diced salt pork and ham. Reduce heat to low and add the dried oregano, onion, pimiento pepper, sweet peppers, garlic cloves and the culantro leaves. Sauté all the ingredients, for about 10 minutes or so, to bring all the flavors together. Increase heat to medium, add all the chicken and cook for about 3-4 minutes. (Rican takes a swig of wine) Add all the remaining ingredients and bring it to a boil. This is where you taste it to see if you added enough salt to your taste. When it starts to boil, reduce heat to medium, cover it and cook it for about 45-50 minutes. Add the peas or your other favorite veggies like canned carrots etc, and boil uncovered until the yummy sauce thickens to your taste. (Rican takes another swig of wine)
