Neapolitan Parfaits
Difficulty: Easy
Prep Time: 20 minutes
Yield: 4 servings

1 cup heavy cream
1/3 cup sugar substitute, plus 2 tablespoons (recommended: Splenda)
1 teaspoon no sugar added vanilla extract
1/2 tablespoon unsweetened cocoa powder
1 pint fresh strawberries, sliced (sprinkle with 1 tablespoon sugar substitute if not sweet)
Fresh mint, for garnish

With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the 1/3 cup sugar substitute and vanilla and continue to whip just a little more to blend; do not whip all the way to soft peaks yet. Put half of the partially whipped mixture into another bowl and finish whipping it on high speed until stiff peaks form. Be careful not to overwhip, or the cream will break. Set
aside the vanilla cream.

To the first bowl with the other half of the partially whipped cream mixture, add in the cocoa powder and 2 tablespoons more sugar substitute and finish whipping on high until stiff peaks form, again being careful not to over-whip. This is the chocolate cream.

In each of 4 parfait glasses, layer a couple spoonfuls of chocolate cream, followed by some fresh strawberry slices, and top it with a couple spoonfuls of fresh vanilla cream. Chill completely before serving. Garnish with a strawberry fan and sprig of fresh mint.

Parfait! Everybody like parfait! That's my favorite scene in Shrek, all grown up and still loooove animated movies. Anyways! Parfait's are really easy, all you really need is yogurt, granola and some kind of fruit. My favorite is strawberry yogurt, cinnamon flavored granola clusters and raspberries. Yum! Use your imagination and enjoy!

My last night is IRISH so I love this one. (hint, I cheat and add some creme de menth) Love grasshopper pies, and drinks so i make it that wat. Just use some half and half or milk to take place of limade.try this way first its refreshing.

ST. PAT'S PARFAITS
25 to 30 chocolate wafers
1 c. sweetened condensed milk
1 (6 oz.) can frozen limeade, thawed
1 (8 oz.) container whipped topping
Green food coloring
2 tbsp. chocolate jimmies

Put wafers in blender. Process until crumbs form. Pour milk and limeade into mixing bowl. Stir well with mixing spoon. Stir in topping. Add 1 or 2 drops food coloring and mix. Place 2 or 3 spoonfuls of mixture in each parfait glass. Sprinkle with 1 tablespoon crumbs. Continue layering cream and crumbs, ending with cream. Sprinkle 1 teaspoon jimmies on top of each parfait. Refrigerate until serving time. Makes 6 servings.

It is so funny to me how snobby cooks have renamed an aussie classic, what we always called trifle is now called parfait. All aussies have a different recipe, and if you ask them, theirs is always the best lol. All it is, is cake, custard, jelly, some kind of fruit, whipped cream and either juice or alcohol drizzled over it. It is totally bendable to whatever you desire.

use heavy whipping cream to make whipped cream. put fresh fruit that has been sliced (I use peaches) in bottom of parfait glass, then add a layer of granola (kellogs sells an excellent granola cereal) then some whipped cream. continue layering until glass is full.
