Haggis is sheep's stomach stuffed with various other sheep meats (some of which are generally considered distasteful to modern Americans), spices, etc. It's kind of like a sausage, just with different textures and a different flavor than what you may be used to. I like it--kinda like a lighter (yet less finely ground) braunschweiger flavor or a highly seasoned meatloaf. In a sheep's stomach casing. I recommend trying it to see if you like it.

From Wikipedia: Haggis is a traditional Scottish dish. Although there are many recipes, it is normally made with the following ingredients: sheep's 'pluck' (heart, liver, and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally boiled in the animal's stomach for approximately an hour. It somewhat resembles stuffed intestines (pig intestines otherwise known as chitterlings), sausages and savoury puddings of which it is among the largest types. Most modern commercial haggis is prepared in a casing rather than an actual stomach. There are also meat-free recipes specifically for vegetarians which supposedly taste similar to the meat-based recipes.

It's sheep intestines & lung boiled in a stomach. It sounds SO terrible, but when it's made right, it tastes almost exactly like meatloaf. You won't be able to buy most of the ingredients in the US (the FDA said some of it isn't fit for human consumption. I wonder why?). I had some when I stayed with a Scottish family in Scotland. It really wasn't bad at all!

It is the innards of a sheep mixed with oats, stuffed into a sheep stomach, and boiled for a couple of hours. It is the national dish of Scotland.

Since you can't buy lungs in the US the true dish can't be made.

I have also heard that it is a small animal with short legs on one side that lives on the side of mountains. If you get it on flat land it runs in circles and you can catch it.
