As far as I can find, all fruits and vegetables can be vacuum packed and frozen, and unless you double the packaging you shouldn't keep frozen items longer than a year, and in some cases no more than 6 months.

Bananas are the only fruit I can think of that does not do well after freezing. They can be used in drinks like malts and baked into bread after freezing but do not taste very good just by themselves.
Corn, peas, beans, carrots freeze well if you blanche them first.
I don't care for frozen potatoes. They don't taste fresh.
Tomatoes are better eaten fresh or canned, but never frozen.
Any and all foods taste better and last longer when vacuum sealed before freezing.

I always remove corn from the cob in the summer when it is fresh from the farm stand and so good. I cook it first and then use my vacuum sealer and we have yummy summer fresh corn all winter.
Chopped onions freeze well. Blanched carrots and asparagus and broccoli and cauliflower are the ones I like best.

any of the root veg,all must be blanched,before freezing ,otherwise they will continue to spoil, regards LF

anything that doesn't 'mush'' upon freezing/defrosting.
keep the temp low and prevent freezer burn, a loong time
