Not only men wear caps while fishing.
Anyone fishing will find that it keeps your scalp from burning while the sun is straight overhead, and it keeps your long hair out of your face. While sight fishing it keeps the glare out of your face so you can see better into the water with polarized fishing glasses.
Also is really hand for swatting flys, mosquitos!

There are several reasons
1) A hat is absolutely essential to wear if fly fishing, as essentially all your fishing with is a tarted up hook at the end of your leader..... and as it weighs next to nothing (all the casting weight being in the line), all it takes is a gust of wind blowing the wrong way or perhaps a misjudged cast to get that hook embedded in your scalp.... it's less painful if it gets stuck in your hat instead (and easier to remove from there than it is from your head).
2) If you've got a baldy head (or it's starting to go on top), it's essential to avoid getting sunburn + whether your bald or not, the peak or brim on the hat keeps the worse of the sun off your nose.
3) The peak or brim of the hat helps keep the sun out of your eyes, and also stops sunlight reflecting off the inside of your polarised sunglasses.... the sunglasses are worn because the polarised lenses cuts down on light reflected off the surface of the water, and in the right conditions enables you to spot fish (or tell tale signs that they're there)..... the addition of the hat helps enhance how well you can see under the water by cutting out more glare.
4) Less serious Anglers (e.g. don't know about things like watercraft...... like in reason 3) just wear them because they think it makes them look cool, or dressed right for the occasion.

It's part of the uniform... they get suspended for a week if they are caught fishing without a hat.
Well, in all seriousness, I think that it's because a cap protects from the sun, during a hard days fishing, the last thing they want to catch is the sun- heatstroke=not good!

First and foremost it looks cool. Especially if it has a cool logo on it or it is YOUR sponsor and they give you cool stuff. Secondly to keep the sun off yer nugget. Third given the right hat it can hold two beverages of your choice. Fourth, it makes a good sun shade for taking those "late afternoon slack in the bite" naps. And of course there is the cool factor... had to list that one since it's so important. :-)

they wear a hat because no man likes to have messy hair in a picture with a trophy fish to keep the sun off their heads and to keep the hooks from going into their heads besides its easier to put a hat on than brush your hair and no one can see

To protect from the sun and also if you're wearing polaroid glasses they work better with the shade from a hat over them.

If, when swinging a rod, a hook gets caught on my cap and removes it, I get to keep my scalp. Get the picture?

The sun glares off the water. You see better when your eyes are shaded.
