I hope that you have some potatoes or at least a good neighbor that will give you 1or 2.
I take the chicken and cut it pieces, salt- pepper it and in some olive oil brown it. While the chix is cooking, slice an onion, chop at least 2 garlic cloves and wedge 2 potatoes, when the chix is brown add everything else and saute for a couple minutes then add the tomatoes and re-season if needed. Covered and let it simmer for 15/20 minutes then enjoy with rice...

Boil some linguine or spaghetti.

Brown the chicken breast. Pour the stewed tomatoes. Add some basil and onions. Season to taste with salt, pepper, lemon juice and oregano. Drain pasta. Plate pasta. Ladle some sauce and chicken on the pasta. Grate some fresh Parmesan and mozzarella blend and enjoy. Have some Tabasco for a spicy kick!

Have fun and Bon Appetit!

spice em up with jalapenos. chop em up and put in the tomatoes, with some sauteed onions and cilantro, cook the chicken breast in there, chop it all up and throw it in a warm flour tortilla, roll it up, then put some of the saucy tomato sauce over the whole thing and some cheese, then put it in the broiler for a couple minutes...Mmmm....
