Trying to get bigger. What's a simple and easy recipe for high-protein/bland meats like chicken. I'm a college student, so I need very simple (yet delicious) recipes. Please don't suggest buying store marinades. Try most of 'em, and weren't great. FYI. No grill.

If you like Asian style chicken.....
I would suggest soy sauce, a couple cloves of fresh crushed garlic, Mirin (rice wine vinegar), a small knob of fresh grated ginger and some Sambal Olek or Siriacha (both are hot garlic pastes available in the supermarket) and 3-4 minced scallions. In an airtight container, combine all ingredients to cover the chicken. Refrigerate and leave for about 1.5 hours, 3 max.... the salt in the soy sauce, can make the chicken too salty if you marinade over 3. Sear on high heat with the skin on (if you are worried about fat, take it off AFTER cooking since it adds flavor and insulates the breast meat from burning) and serve with a simple Asian slaw of Napa cabbage, julienne carrot, fine diced red onion, jalapeno, sesame oil, salt, pepper, rice wine vinegar and a splash of olive oil. This can be cut and prepared in the same amount of time it takes to cook your chicken. Remember when you cook your chicken, you want to take it off the heat at 157F and let it rest and carry over to 165F. This will yield a more moist and succulent chicken.

If you have an oven and are able to roast a whole bird, I REALLY suggest that you do. Whole chickens are LESS Expen$ive and you can fill the skin and the breast with fresh herbs before you roast it. Again, the magic # is 157 degrees F and rest until 165F. Also by cooking a whole bird on the bone, you gain a lot of flavor, and can make chicken salad for the next day. Marinade for fish. - Soy Sauce, Mustard, Brown Sugar Marinade for Steak - Olive Oil, Soy, Black Pepper Marinade for Chicken - Soy Sauce, Orange Juice or any citrus, ginger Basically soy is perfect for all meats. Always a good staple to have on hand. If you don't like soy. You might like just making brine of water and salt, then adding the herbs or spices you like. Beer makes for a good marinade ingredient for chicken and fish. Also buttermilk is great for fish, add some red pepper and salt to the buttermilk.

Mix 1/3 cup ANY steak sauce (dollar store stuff, generic will do!)
1 tbs (packed) brown sugar

marinade ANY meat.
cook ANY way.

This is soo amazingly delicious, easy, cheap & versatile!

I use soy sauce and Worcestershire sauce. Really tastes great.

A1 sauce, soy sauce, teryaki sauce, oregano, salt'n' spice, lemon juice.....good stuff...
