Anything Italian is perfect. It HAS to have some wine though. any type of pasta dish, maybe some candles (dont let the room get too hot though) and some nice wine. Set some Sinatra or Romantic music very lite in the background. not too loud so that you guys can't hear each other speak. Spark up some interesting conversation while you dine. The rest will just unfold itself. Its pretty much in the bag.

We'd gone out a few times when my husband first made me his recipe for Chicken Cordon Bleu. It's lighter than a pasta dish, which can weigh you down, and actually pretty easy to make.
He pounds a chicken breast out to about 1/2" thickness and lays a couple of thin slices of proscutto ham and baby swiss cheese on top, then rolls it up. After that, he sears it in a little cooking sherry before he puts it in the oven for about a half an hour. I think he uses a little basil or rosemary on the chicken, but very little... he lets the ham and swiss do most of the flavoring.
Some roasted red potatoes and asparagus spears with (again, easy but tasty) Knorr hollandaise sauce would work really well and really impress your date.
And yes, we're married. Who can say no to a guy who can cook?

Roasted chicken in the oven with some light seasoning. Tossed spinach salad w/ candied nuts and cranberrys and a light vinnaigrette dressing. Make a light pie or get some angel food cake, slice it thin and layer some sliced strawberries in between the cake pieecs to form a tower. Throw a little cool hip on the top. Have some wine or champagne and make sure to slit the strawberry and set it ont he edge of the glass. You can even toss the berry in the beverage after you toast and then eat it when you are done with your drink.

This isn't so much lite as a real mood setter. It might be a pricier recipe to make than you are looking for, but it is very much worth it:
SAFFRON ORZO WITH ASPARAGUS AND PROSCIUTTO
Yield: 6 servings
4 Tablespoons butter (1 /2 stick)
2 ounces thinly sliced prosciutto, cut into thin strips
1 1 /4 Cups Orzo (about 8 ounces)
3 Cups low-salt chicken broth
1 /2 teaspoon (loosely packed) saffron threads, crushed
1 pound slender asparagus, trimmed, cut into 1 /2" pieces
1 /4 Cup grated Parmesan Cheese
Parmesan Cheese Shavings, Optional but recommended
1. Melt 2 Tablespoons butter in a large, non-stick skillet over medium-high heat. Add prosciutto and saute until almost crisp, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.
2. Melt 2 Tablespoons in the same skillet over high heat. Add Orzo; stir 1 minute. Add broth and saffron; bring to a boil. Reduce heat to medium-low, cover, and simmer until orzo begins to soften, stirring occasionally, about 8 minutes. Add asparagus; cover and simmer until tender, about 5 minutes. Uncover and simmer until almost all of the liquid is absorbed, about 1 minute. Remove from heat.
3. Mix in prosciutto and 1 /4 cup of the grated cheese. Season to taste with salt and pepper. Transfer to a large bowl. Garnish with the Parmesan shavings.

Pasta with vodka cream sauce (Classico brand), garlic bread, and a baby greens salad. A nice bottle of red wine would be nice too.
I've heard that you should only prepare this pasta dish if you really like the guy; because it is so good, you may not be able to get rid of him.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

It really depends on what your significant other likes. You could spend hours on a special dinner but not receive one compliment if it is something they do not like. But you fix their favorite meal, no matter how boring, you can spice it up if you serve it in the nude;-)
