I always liked to buy Garlic on vinegar. Easy to use in my cooking. However, i decided to make a jar of my own. I bought a big jar that could be closed air-tight, a lot of beautiful big garlic and i peeled the garlic and put it in the jar with the white vinegar. Then, to my surprise, after a few days, all the garlic cloves had turned a bright blue color.. how did that happen? I trew them away, i dont think they were still edible. Any explanations?

Oh, and ifa nyone has an idea how i can do it without getting them to turn blue, i;d be ever so grateful

Mine turn blue too! But they taste and work just fine. The store bought ones are actually cooked in the vinegar. To do this put the garlic and vinegar in a sauce pan and bring up to a boil. Immediately dump into a jar and allow to cool. That will stop the blueing.

It's a chemical reaction! They are responding to the high acid environment with the lack of heat. Think litmus test, that is if you've ever been in a chemistry class.
