I actually posted this same recipe last week - I don't measure - I do everything by eye and I use boil in the bag rice for all dishes because it's fast and easy (Uncle Bens)

for 6-8 large green bell peppers
1.5 pounds of hamburg
half cup cheddar cheese
half cup lb monterey jack cheese
(I use a half of a lb each!)
garlic salt
onion powder
ground pepper
minced onion
white rice - I use boil in the bag, one bag
2 cans of tomato sauce

preheat oven to 350
cut tops off the peppers and boil until tender, drain and put in casserole dish
cook the hamburg w/ garlic salt, minced onion and onion powder
drain
meanwhile, cook the rice
add in tomato sauce and cheeses and cooked rice, stir until cheese is melted

fill peppers with mix and bake in oven until tops are crusted over lightly

Hi, Stuffed Bell peppers?
Combine 1lb lean ground beef( not so messy)
2-3 slices of bread torn into little pcs or you can use cooked white rice 1C
1 egg
salt& pepper to taste maybe some garlic salt or italian seasoning
1/4 c katsup
mix all this together, like your making meatloaf
get 4 good size bell peppers cut off the tops and remove the seeds,you might have to trim the botoms a little so they will sit flat in the pan, stuff them with a little sticking out the top ( will shrink during cooking) place them in a 8x8 backing dish and bake on the middle rack at 350 for about 30-45 min check for doness .MMMMMMMM!!!!!!!!!

I have been using this recipe for over 45 years, & it was my mother's before then, & we all still love it! I am happy to share it with you! Enjoy!

STUFFED BELL PEPPERS

6 to 8 bell peppers
2 T. butter
1 small onion, chopped fine
1 lb. ground chuck
1 c. rice, cooked
1/2 c. canned diced tomatoes, drain & reserve juice
1 tsp. brown sugar* (optional)
salt & pepper, to taste

Preheat oven to 350 degrees F. Wash peppers. If the peppers are small, leave them whole & cut off a slice from the stem end. Cut large peppers in half lengthwise. Remove the seeds & white membrane, & discard. Cook peppers in salted boiling water 5 minutes, invert & drain thoroughly. Cool. Place in shallow baking dish & set aside. Mix rest of ingredients & generously fill bell peppers. Top all with the reserved tomato juice. (*If you desire a sweet sauce dissolve 1 tsp. brown sugar in the reserved tomato juice before pouring over the stuffed peppers.) Bake for 35 to 45 minutes. Serves 6.

Cut the top off the pepper and get most of the inside out
brown ground beef and add rice if you like it...onions to flavor and then fill the pepper after its drained...
then you back for maybe 20 min at 350

Stuffed Peppers



1/2 cup rice
1 1/2 cups water
1/4 cup olive oil
1 large onion, peeled and finely chopped
6 ounces ground beef
1 clove garlic, finely chopped
2 cups crushed tomatoes
Salt and pepper
1 teaspoon thyme
1 teaspoon oregano
4 red or green bell peppers

In a 2 cup measuring cup combine rice and water and cover tightly with plastic wrap. Cook at 100 percent power for 4 minutes. Heat oil in 2 quart casserole dish uncovered for 2 minutes. Stir in onions and crumbled beef and cook uncovered for 5 minutes stirring once. Drain off most of fat, leaving 2 to 3 tablespoons in dish. Add 1 1/2 cups tomatoes, garlic, thyme and oregano and drained rice and stir to combine. Slice off tops of 4 green or red bell peppers and remove seeds. Divide stuffing among the peppers and replace tops of peppers. Place peppers in baking dish. Combine 1/2 cup crushed tomatoes, 1/4 cup white wine and 1/4 cup water and pour into bottom of dish. Cover tightly with heavy duty plastic wrap and cook for 20 minutes. Poke through wrap with knife after 10 minutes of cooking to let steam escape. Let stuffed peppers stand for about 5 minutes after cooking

cut the top of the pepper and remove the seeds
you get ground beef (sausage optional) white rice and onions and make them in a ball
you put the meat inside the pepper
you can bake them or make them in a crock pot too and you use spaghetti or tomato sauce
