I am looking for a new meal to give a go at cooking.something simple.any ideas??

Two things come to mind, both tried and true (by yours truly!!) and very, very easy:

Ground Beef & Rice Casserole

1 lb. ground beef
1 med. onion, chopped
4 ribs celery, chopped
1 1/2 c. water
1 c. uncooked rice (not instant)
1 can cream of mushroom soup
1 can cream of chicken soup

Brown meat; set aside. Saute onions. Add celery and water and simmer 5
minutes. Add rest of ingredients. Mix well and place in casserole. Bake 1 1/2 hours at 350 degrees.


A coworker made this for a potluck and I just HAD to have the recipe:

Baked Chicken and Cheddar
•Boneless, skinless chicken breast
•1 can cream of chicken soup
•2 cups cheddar cheese, shredded
•6 oz stove top stuffing
•1 stick butter or margarine, melted

1.Cut enough chicken into bite-sized pieces to cover the bottom of a 9” x 11” baking pan.
2.Spread cream of chicken soup over the chicken. Sprinkle with cheese.
3.Top with 3/4 of an 8 oz canister of Stove Top Stuffing (not box) and pour melted butter over all.
4.Bake at 350 degrees for 45 minutes.

Chicken Mornay

Cooked chicken breasts - 4
Slightly undercooked broccoli
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup mayonnaise
hand full of shredded cheddar cheese
1 teaspoon lemon juice
1/4 teaspoon curry powder
French fried onion rings (the kind in a can)

Spray the bottom of a 9 X 9 inch baking dish
Arrange cooked broccoli in the bottom
Place diced up chicken on top of broccoli
Mix Soup, sour cream, mayo, cheese, lemon juice and curry then
spared over chicken. Sprinkle onion rings on top
Bake at 350 for about 30 - 45 minutes.

This is an all time favorite of my family and any guest I prepare it for. It's a winner. Happy cooking.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

How about a Pasta recipe.(simple,easy)
Chicken cut into small pieces.
1large onion.
Jar passata.
2Garlic cloves
Chopped bacon (two-three rashers)
3 herb sausages.
Mixed herbs
Fry onion and garlic,add meat/bacon,and brown slightly.Add Passata,and herbs.Simmer, Boil sausages in water for a couple of minutes til swollen, remove, cut into slices. Add to sauce. Simmer for about 1 hour,on low heat. Remove pan lid,turn up heat, reduce sauce down a little. 12-15 minutes before eating,boil some water. Add pasta. Bring back to boil. Simmer for 12-15 minutes. Drain. Pour sauce into large bowl,add Pasta,mix well with the sauce. Serve with grated cheese on the top,and a side salad.! Bon Appetite !

Get a slow cooker (some call it a crock pot)
Put in a roast ...
a packet of Lipton Onion Soup Mix
Some water (just enough to almost cover roast)
One Onions & 1 clove garlic

Put on high and leave for 4-6 hours. SO EASY!

Pita Chicken Sesame Sandwich

Ingredients
1 - cup mayonnaise or salad dressing

2 - tablespoons soy sauce

2 - tablespoons toasted sesame seeds

1/4 - teaspoon ground ginger

2 - cups cooked chicken, chopped

1 - cup Chinese pea pods, chopped

1 - cup red bell pepper, chopped

1/2 - cup almonds

4 - whole wheat pita breads, cut in half

Directions
Mix a mixing bowl, blend dressing, soy sauce, sesame seeds, and ginger.
After the dressing mixture is well blended, add the chicken, pea pods, bell pepper, and almonds.
Mix all ingredients well.
Spoon into pita pockets.

Quick Chicken Vegetable Stir-Fry

Ingredients :
1 tbsp. vegetable oil
3/4 lb. skinless, boneless chicken breasts, cut into strips
1 lb. frozen vegetables or 4 cups cut-up fresh vegetables
1 can Campbell's Condensed Regular or Half Fat Cream of Chicken Soup
1/3 cup water
1 tbsp. Soya sauce
2 green onions, sliced
4 cups hot cooked rice

Instructions :
1) In large non-stick skillet over medium-high heat, heat oil. Stir
fry chicken until no longer pink. Remove from skillet; set aside.

2) In same skillet over medium heat, stir fry vegetables for 5-7
minutes or until tender-crisp.

3) Stir in soup, water, soya sauce and green onions. Bring to boil. Return chicken to skillet. Heat through, stirring occasionally. Serve over rice.

Serves 4

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
