The same reason people even speak different LANGUAGES.
You see how language changes. I'm sure there are words you use now that nobody used in the same way when you were younger.
Places that are far from each other and don't have DAILY contact with each other all change different things about their language over time. In Montana they start calling carbonated sugar water "Pop", while in Arizona they call it "Soda", and "Fizzy drink" in New Zealand, etc.
Even with TV and phones and the internet, regions still change. The Western Northeast / Northeastern MidWest is going through a MAJOR vowel shift that started in the 1990's!
When language changes a little, the accent or dialect changes.
When it changes a lot, the whole LANGUAGE changes!

Well, it's like a town's history...Depends on the area, the ancient civilizations that lived there, the mother tongue, traditions, and culture. This applies to accent and use of words, languages come from different "families". Also wars are factors that can change a language or just add more vocabulary.
