No pasta dishes...just had spaghetti last night. Something easy, maybe with chicken? Suggestions??

If you've got some frozen chicken breasts, rice, and a veggie, you can simmer them all in a pan with your spices (low fat) or a can of cream of mushroom for a creamy sauce.

ROASTED CHICKEN WITH BALSAMIC VINAGRETTE
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
2 tablespoons olive oil
Salt and freshly ground black pepper
1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
1/2 cup low-salt chicken broth
1 teaspoon lemon zest
1 tablespoon chopped fresh parsley leaves

Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.

Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

Chicken Casserole

1 pkg Boneless Skinless Chicken (1 Breast 4 thighs)
1 box Chicken Flavored Stuffing
2 Cans of Cream of Chicken Soup
1 can of milk

Put chicken in pot and boil for about 1/2 hr.

Make stove top stuffing according to directions on the box and set aside.

Take cooked chicken, cut into pieces and place in baking pan.

Mix 2 cans of cream of chicken soup and 1 can of milk together and pour over chicken.

Spread Stuffing over chicken. Bake at 350 for about 1/2 hr.

Serve with mashed potatoes and veggie of your choice.

my girlfriend just tested out this quick and easy recipe she got fron kraftfoods.com. its chicken with zesty italian dressing and potatoes cooked in the oven for about an hr with parmeasean cheese over it. its was quick and very good. just season the chicken with salt and pepper add the chicken and potatoes tossed with the dressing and a bit of cheese over it put it in a 400 degree oven for about an hr and its done. make a salad and any other side dish and its done

Chicken Pot Pie...

You will need:
2 skinless, boneless chicken breasts (thawed)
1 package of frozen pie crust (2 pieces, 1 for the top and 1 for the bottom)
4-5 small red potatoes
1 can cream of chickne soup (not chicken noodle)
1 can cream of mushroom soup
1 can corn
1 can sliced carrotts
1 can peas
1 large bowl
1 large spoon or spatula
1 round baking dish

Pre-heat your oven to 375*F. Dice up some small red potatoes and boil them until they are almost soft (consistency of potatoe salad - slightly crunchy). Boil 2 chicken breasts in a seperate pot.
While chicken and potatoes are boiling, open a can of sliced carrots, a can of corn, and a can of peas. Drain each can and pour 1/2 of each can in a large bowl. Add in 1 can of cream chicken soup and 1 can cream mushroom.
Open up the pie crust and press it slightly into a round baking dish. After chicken is done boiling, drain and shred up. Add chicken to your bowl of mix. Drain potatoes and add those as well. Give it a good stir to coat everything and load it into your pie crust baking dish.
Lay the second pie crust on top and pinch down the sides. Make a few slices on the top to let the steam out and in the oven it goes. Cook it until the top is golden brown. It's GREAT and while it's cooking you have time to start on some homework!!


**TIPS**
- Do not put foil on top of your dish, you may want to put it under the dish in case some filling boils out you don't have to spend an hour cleaning your oven.
- Do not grease your round dish before putting the pie crust in.
- Cut small slits on the top of the pie, just slightly press the tip of a knife in and then pull it out. Large slits will turn into large holes in your pie.
- Thaw your pie crusts a little before pressing them into the mold. Maybe take them out before you start your potatoes or chicken. They are much easier to mold when they are slightly room temp.

Make?? Heck; Stop by the store and pick up one of those
roasted chix with the trimmings... Done, Done Done!!
While there pu some crossants and other side dishes and u have tomorrows dinner..Chix salad Sand w/ salad
u can pu in a bag... Add soup.. Hello!!!
By the way Tip- I add slivered almond and red grapes
family thinks its fancy....OOh la la....

But if u have chix already- marinate in tequila lime sauce
made by Lawery's...George foreman it and there u go!
Microwave potatoes and corn on cob done....

How about the grill?
When i want easy, I grill chicken, pork chops, burgers....
chicken you can cut into strips, batter and fry to make chicken fingers...
more healthy you can cut chicken into strips, make a marinade or just season and saute to put into tortillas with lettuce, cheese, tomatoes, onions , sour cream....chicken soft taco!
