I think I've given this recipe out 3 times today but I totally love it!!
Ground Beef & Rice Casserole
1 lb. ground beef
1 med. onion, chopped
4 ribs celery, chopped
1 1/2 c. water
1 c. uncooked rice (not instant)
1 can cream of mushroom soup
1 can cream of chicken soup
Brown meat; set aside. Saute onions. Add celery and water and simmer 5
minutes. Add rest of ingredients. Mix well and place in casserole. Bake 1 1/2 hours at 350 degrees.

We do this thing that we call Lion Burgers we had them at a fair once. It is quick and easy. You take the hamburger and brown it in a pan just like tacos. Cut up green peppers and onions add them all together and cook until the onions and green peppers are fully cooked. Then you can put the mixture on sub rolls or on hot dog rolls. If you like mayonnaise you can put that on as well.

TRY ME!!!!!!!!!!!!!!!!!!!!!!! Homeade matza balls.. the quick and easy version.. My own personal recipe:
Mix the raw hamburger with about 2 handfuls of italian breadcrumbs and about 1/2 of a minced onion and2 cloves of finely minced garlic. Add a couple big pinches of italian seasoning, crushed black pepper, and some salt.
Form the meat into balls. Now comes the fun part. Take about 4 pieces of string cheese and cut it inot 1/3's. Insert a piece of the cheese into the middle of the balls.
Heat a large skillet on a little over medium.and stick the balls into it. Rotate the balls so each side gets cooked about every 10mins or when the side is brown.
Cook about 3 cups of minute rice (white) and heat your fav pasta/marinara sauce. Put the matza balls on the rce and add sauce. Serve and Enjoy!

Tater tot casserole has always been one of my favorites.
Cook 1.5 to 2 pounds of hamburger. Once cooked add 1 can of cream of mushroom soup and 1 can of french cut green beans mixing well. Place the mix into a 13x9 pan. Top with tater tots. Cook at 350 until the tater tots are done.
Quick, easy and something most kids will love!

1 lb. ground beef
1 can Cream of Mushroom soup
1 can green beans
Mashed potato flakes + the stuff to make 8-10 servings
grated cheese.
Turn on the oven - 350
"Frizzle" the ground beef; drain.
Add can of soup
drain and add green beans
Mix up some mashed potato mix
Put the beef mis in a casserole, spread the potatoes on top, sprinkle on a lot of grated cheese - bake til cheese melts.
After 20 years (and I'm a GOOD cook!) this is still one of my kids' favortie meals.

MEATBALL SPECIAL:
1 lb. lean ground beef
1/2 cup bread crumbs
1 egg
1 cup tomato sauce- divided (1/4 & 3/4)
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground allspice
1 onion, chopped
2 Tablespoon oil
3 cups water
1 package Onion Soup Mix
1 1/2 cups carrots, sliced
10 oz. package frozen peas
1/2 cup green pepper, chopped
3 potatoes, cubed
Combine in a bowl; ground beef, bread crumbs, egg, 1/4 cup tomato sauce, salt, pepper, allspice and onion. Mix well and form into 12 meatballs. In a skillet, heat oil and add meatballs. Brown meatballs on all sides and drain grease. In a large pot, add meatballs, water, 3/4 cup tomato sauce, onion soup mix, carrots, peas, green pepper and potatoes. Bring to a boil and cook over low heat for 30 minutes or until vegetables are tender.
STUFFED HAMBURGERS:
1 lb lean ground beef
1 1/2 teaspoons your favorite seasoning salt
3 ounces cream cheese, softened
1 Tablespoon prepared mustard
1 Tablespoon prepared horseradish
Mix seasoned salt into ground beef. Separate beef into four parts. Take one fourth of the beef mixture and split in half. Flatten each one out on wax paper into a thin hamburger patty.
Mix together cream cheese, mustard and horseradish until smooth. Add a spoonful to one of the patties. Place the other patty on top of the mixture and pinch sides together to seal.
Repeat steps 3-5 until you have four stuffed burgers. Let chill in refrigerator for 30 minutes . Cook on grill.

I love to make meatball subs. Get a baggette and some pasta sauce and then bake the meatballs. I use breadcrumbs, parm, an egg beaten and italian seasoning. Once baked, combine with sauce and then melt mozzeralla over sandwich! Yum!

Ground Beef Fajitas
Fajitas - fast!
1 lb. lean ground beef
1 large onion, cut into thin wedges
1 green or red bell pepper, cut lengthwise into thin strips
1 cup mild prepared salsa
2 tsp. chili powder
8 medium flour tortillas
-- chopped tomatoes
-- chopped green onion
-- sour cream (optional)
In large nonstick skillet, brown ground beef, onion and bell pepper over medium heat 8 to 10 minutes or until beef is no longer pink, stirring occasionally. Pour off drippings.
Stir in salsa and chili powder. Reduce heat to low; cook 5 minute, stirring occasionally.
Serve in tortillas with choice of toppings.
