set her up a day at the spa. She could get a massage and facial...whatever. I PROMISE this will make her very happy. I work in one and every woman that got this as a gift from the man was super impressed and happy.
good luck!

Write up a list of the top 100 (or 50, or 25 or whatever) reasons why you love her and send that to her. Something like that means more than diamonds to most women. Tell her the moment you fell in love with her, and why you fell in love with her. Anything hand written and sincere like that is gold, and worth keeping forever.
Edited to add: I forgot to say Thank You for being in the military -Thank You!!

Find a boutiqu or a day spa close to your home and get her a gift certificate for that. Or you can do something for her and one of her friends or your mom. Including some else will make her feel special also. Or if you have kids try something for all 3 of them...like a fun fest or other place that has games for every age.

What about a voucher for a beauty treatment? Lots of my friends have loved being given vouchers for a massage.
Or a video message (or are you able to do this all the time?)
what about a book of personal vouchers of what you promise to do to her, or together as a couple when you return? anything from breakfast in bed, doing the housework, having a lie in or anything you can think of!

You could try seeing if you can order some skywriting to be done. Or have tickets to a play sent to her. Perhaps one of her girlfriends can work with her, maybe slip it in somewhere.
The chef idea in the first answer is very good.

Write 365 things that you love and/or miss about her, on separate pieces of paper. They can be serious to silly (ex: I miss your morning breath) and then tell her to open only one each day, and she will have something to read every day for an entire year on things that you love and miss about her.
