To determine your carbs in coleslaw, if home-made yourself, you base it off your ingredients. If you make it will mayo or sour creams, etc, you will need to look at the carbs per serving and determine from that. Carrots also have carbs, and you would have to determine from that as well. Lower fat mayo and fat free mayo have more sugars and carbs generally to make up for the fat removed from the regular recipe.

If it's homemade, you could go to http://fitday.com and get numbers for the individual ingredients. If it's a commercial one, like KFC, they usually have the information on their website (KFC's has 22 grams carbohydrate and 3 g fibre for an individual sized serving).
