I grind the coconut masala with chilies, turmeric,cumin and coriander seeds, then fry onions in oil and add the ground malasa with some water, it sometimes turns out good, but when i'm really expecting some guests the gravy curdles and spoils my whole menu.

Ok here's what you need to do, you need to fry the onions first then drain the excess oil. Oil will curdle anything with a milk based texture such as coconut. (kind of like how the water sits on top of oil and doesn't mix). The spices should be added right after draining the oil followed up by the masala. While you add the masala.. stir continuously and pour slowly. That should work.. Good luck!

Maybe the oil from the onions is causing it to seperate

The only thing that I can think of is that your heat is too high.
