"Schutzhund" by Susan Barwig is a good book to acquaint yourself with the basics of protection training. It's out of print, as far as I know, but you can still get it through Amazon or Alibris.
I strongly recommend that you work with a professional trainer, though. There are probably Schutzhund clubs in your area, and they can help you. Google Schutzhund and you'll find listings.
Like a friend of mine says, "A dog is like a gun -- the bigger the dog, the higher the caliber." If you want a protection-trained dog, I think you'd want to be able to handle that "weapon" to the best and safest of your ability.
Edit: if there's any question about that last statement, consider that a lot of police dogs live at home with their handler and his/her family. That's why professionals build in safeguards during training to prevent tragedies.
Personally, I wouldn't own any dog that I couldn't trust to be around kids and other animals -- be it a German shepherd or a Chihuahua.

A shepherd is natually protective no training neccesary other than obeidience unless you need it for something very specific. We had a trainer tell us our shepherd would never bite any body because he wasn't interested in the training sleeve. Do lots of research and don't be afraid to get a second opinion if you do get a trainer. Otherwise look into obeidience classes where they teach you to train your dog and go from there. Shepherds bond with their family kids and all. They are wary of strangers.

It cost me 1400. bucks to train my Shepherd for pertection and the guy came to my house all he did was aggitate him with a stick first not hitting him hard just toch him with it on his back side and theres a spot where the back leg is that hangs he would grab him there and piss him off and when he would bark and show teeth i would say good boy then after a while he taught him german commands and on a sleeve this was a sweet loving dog a BIG BABY now he is still our BIG BABY but let someone come into our yard. Tip of the day...do not train your dog yourself! It takes a pro to make a good gaurd dog. I have assisted several times in training all kinds of dogs for protection, it takes a lot of skill and hard work! I don't think it is something easily picked up in a book and could end up being dangerous for you and your dog if not done properly!

Good Luck. German Shepherds are very aggresive and not good around children when trained for protection. I have had 6 and I would not have trusted any of them around people without me around.
If you are going to use stricktly for protection look into Shitzund Training.

what do you want to train ur dog for specifically... dogs will guard you with ur life if you give them love.... it is a german shepherds natural instinct to guard though so you don't have to worry about that

Look up Schutzhund and google for Schutzhund trainers in your area. Schutzhund teaches obedience, tracking and protection.
