I don't know how much from scratch you want it, but pillbury has a pizza dough you can buy in the refridgerated section of the grocery store by the cookies and dinner rolls and stuff, the dough fits on a cookie sheet. You heat it at 400 degrees for 7 minutes or so til its golden on top, then add your sauce and cheese and toppings and bake it another 8-10 minutes. I actually prefer this to the stuff most pizza places around my area deliver, and its a lot easier than making dough from scratch.

Basic dough recipe:
1 package dry yeast
1 cup of warm water (~ 100 F)
1 TBLSP olive oil
2 1/2 cups unbleached flour, plus more to adjust dough consistency and dust your rolling board.

Proof the yeast in the water to make sure the yeast is still active. Stir the yeast until dissolved and wait about 5 minutes to make sure it has a bit of foam.

Add the flour about 1/2 cup at a time and stir to remove lumps. Add the olive oil about halfway through the flour. Your goal is to have a dough that is not too wet and not too dry - it is the right consistency when it sticks together as a ball and you can scrape clean the sides of your bowl. Add a bit more flour, a TBSP at a time to make the adjustment.

When the dough is just right, you need to let the yeast do its work. Take more olive oil (1-2 tsps) and roll the dough until it is well-coated. Or spray the ball with a cooking spray like Pam. Cover the dough with a sheet of Saran plastic wrap, and put the bowl in a warm, draft-free spot for the first rising (fermentation.) Inside a microwave ove works well - but don't let anyone try to cook the dough or the yeast will die.

After the dough rises to a double in size (about 1 hr), lightly punch it down, and fold it over on itself to knead it. Repeat the oiling, plastic and let it rise again (about 30 mins.)
Remove the dough. You can make one very large pizza or 2 medium sized (cut dough in 2.) Flour your rolling board, and roll the dough out to the size you want. You may need to let it rest because the flour gluten will want to pull it back to smaller size.

At this point, turn on your oven to 425 to preheat. You can bake on a pizza stone (use parchment or corn meal to keep the dough from sticking), a pizza pan, or cookie sheet. A pizza or bread stone preheated in the oven will really help the baking because the thermal mass will ensure an even and constant heat.

If you are baking on a solid metal pan or cookie sheet, use a fork to pierce the rolled out dough all over, so steam will escape and not build up bubbles in the dough.

Assemble your ingredients:
sauce (marinara or other)
sliced meats
shredded cheeses (mozzarella, cheddar, Parmesan, etc.)
all the toppings, etc.

Apply the sauce with a large spoon, evenly. Sprinkle the cheese, then place your toppings.

Bake for about 15-20 minutes at 425. Check at 12-15 minutes. The cheese should be melted and the crust should be nicely browned. (test with a fork for crispiness.) You might need to bake a bit longer.

Remove, slice and serve. Most important, be gracious and humble when accepting accolades about your made from scratch pizza.

Tip:
For best results, put the dough it into a 1-gallon Ziploc bag and let it rise in the refrigerator overnight - a slow fermentation will give a richer dough flavor. Remove about 1-2 hrs before you bake your pizza to let it come to room temp for a 2nd rising.

Homemade Pizza
Dough Recipe (use whatever pizza toppings you want to)

Dissolve:
1 T Yeast in
4 T Warm Water

Combine and add to Yeast:
1 C Warm Water
1-2 tsp Salt
2 T Olive Oil

1) Beat into yeast mixture 2 C Flour then add enough flour so you can kneed till the dough tends to stretch rather than tear when pulled on.
2) Let rest 10 minutes.
3) Press onto lightly greased pan (hint: I put some cornmeal on the pans before spreading the pizza dough on. Just sprinkle a thin layer over the oil.) Let rise 10 minutes.
4) Bake at 425 degrees for 10 minutes.
5) Add toppings... sause, cheese, toppings... ect
6) Bake 15 minutes at 425 degrees.

The best: to try a Greek Pizza use these toppings: sauce, mozzerella cheese, feta cheese, sliced black olives, sliced fresh tomatoes, spinich... and even artichoke hearts!

pizzasauce

1 lb plum tomatoes
2 stalks celery
garlic to taste
salt to taste
olive oil

peel, depip and chop the tomatoes (or just use canned ones, they're fine) and chop the celery. slice garlic thinly (i usually use two cloves). heat some olive oil in a smallish pan, put in the garlic and stir fry till lightly browned. add celery and tomatoes, stir fry for a few minutes, add salt and bring eveything to a boil. when boiling, reduce heat to about half, cover and cook for about half an hour. while sauce is cooking make

base:

1 lb flour
2 oz fresh yeast or 1 oz dried yeast
lukewarm water
olive oil

take three teaspoons of flour from the pound, mix it with some lukewarm water and crumble in the yeast. leave to sit for a few minutes. make a well in the rest of the flour and pour in the yeast mixture. carefully add more water and knead till you have a smooth dough. if dough is not becoming smooth, add more water. once the dough is smooth, add a little olive oil and, if you want, some oregano. roll out dough onto a baking sheet and cover with the pizzaiola and toppings of your choice.

when topped, bake for about 30 minutes at 225 celsius/ 425 fahrenheit. YUM! :-)

2 pizza crusts:
5 cups, (500 g) flour, 2 pkgs (15 g) active dry yeast , 2 Tbsp (30 ml) sugar, 2 tsp (10 ml) salt, 2 cups (500 ml) water
1. Mix all of the dry ingredients first, then add the water. It will appear to be too dry. Do not add water. Keep working the dough until it is smooth. (This requires a little faith but it really works).

2. Let the dough rise once (approx 1 hour). Punch it down and knead again.

3. At this point you may choose to freeze some of the dough. If you do freeze it, be sure to wrap it well and freeze it quickly. With either fresh or thawed dough, let the dough rise a second time.

4. After it has risen, punch it down and use it for your pizza. The dough will rise a little while you put the rest of your pizza toppings on it. Then bake as appropriate for pizza thickness and toppings.
I have tried variations like whole wheat, and just about any flour combination that works for bread works for pizza dough.

RATING
Difficulty: easy.
Time: 20 minutes preparation, 2 hours rising.
Precision: measure the ingredients.

Homemade Tomato Sauce Recipe
Ingredients
1/4 cup extra-virgin olive oil
1 large onion, peeled, coarsely chopped (2 cups)
1 large carrot or 2 small carrots, peeled, coarsely chopped (about 3/4 cup)
3 garlic cloves, peeled, finely chopped
5 large tomatoes, coarsely chopped (4 cups) or 2 (28-ounce) cans whole tomatoes, drained, coarsely chopped
2 tablespoons tomato paste
Coarse sea salt to taste
Freshly ground black pepper to taste

Instructions
In a large heavy skillet, heat the olive oil over medium-high heat. Saute the onion and carrot for 2 to 3 minutes, reduce the heat to medium, cover and sweat the vegetables over medium heat for about 25 minutes or until soft and golden.

Add the garlic, stir well, cover and sweat for 5 minutes more or until softened. Add the tomatoes and tomato paste. Bring to a boil, reduce the heat to medium-low and simmer, uncovered, for about 10 minutes to blend the flavors.

Push the cooked sauce through a food mill or blend in a food processor and push through a sturdy, small-holed strainer into a large bowl. Add salt and pepper to taste.

The sauce can be cooled and stored in the refrigerator for up to 1 week or frozen up to 3 months.

Yield: 8 servings

Variations

¥ Add 1/4 cup chopped fresh basil at the very end of cooking.

CHEESEBURGER PIZZA

1 (10 oz.) pkg. refrigerated pizza dough
1 lb. lean ground beef or pork sausage
1 (8 oz.) can pizza sauce( I use ketchup sometimes)
1 tsp. prepared mustard
1/8 tsp. pepper
1 med. onion, thinly sliced
4 slices American cheese, halved diagonally
1/3 c. chopped dill pickle (if no pickles i have improvised relish)
Also I top with more and more cheese shredded cheddar, and mozz. mix

Grease a 12 inch pizza pan or a 13x9x2 inch baking pan. On a lightly floured surface, roll dough into a 13 inch circle for the 12 inch pan or (14x10 inch rectangle for 13x9x2 inch pan). Transfer to pan. Build up edges slightly. Bake in a 425 degree F. oven about 10 minutes or until lightly browned.
Meanwhile, cook ground beef in a large skillet until browned. Drain fat. Stir in pizza sauce, mustard and pepper. Bring to boiling; reduce heat and simmer, uncovered, 5 minutes. Spread meat mixture over crust. Top with onion and cheese slices. Bake 10 to 15 minutes more or until heated through. Sprinkle with pickle.

@@@@@@@@@@@@@@@@@@

CRUSTY PIZZA DOUGH
1 pkg. active dry yeast
1 c. warm (105 to 115 degree) water
1/2 tsp. salt
2 tsp. olive oil
2 1/2 to 3 1/2 c. flour
Cornmeal for pan

Dissolve yeast in warm water in mixing bowl; let stand 5 minutes. Add salt, olive oil and 2 1/2 cups flour. Use mixer with dough hook. Turn to low speed and mix for 2 minutes; can be mixed by hand also. Add remaining flour, 1/2 cup at a time, until dough clings to hook and cleans sides of the bowl. Knead on low speed for 5 minutes. (If done by hand, this flour would be kneaded in on a floured board or countertop until smooth and elastic, about 7 to 10 minutes.)
Place in a greased bowl, turning it to grease top. Cover; let rise in a warm, draft-free place, until doubled in bulk, about an hour. Punch dough down.

Brush 14-inch pizza pan or cookie sheet with oil (cookie sheet should have raised sides); sprinkle with cornmeal. Press dough across bottom of pan, making a collar around edges to hold filling. Bake at 450 degrees for 10 minutes. Top with desired fillings and bake for another 10 to 15 minutes until crust is golden brown. Makes 1 (14 inch) pizza. Slice and enjoy!
