Tortilla roll-ups are always good and different from the everyday sandwich. The tortillas come in different flavors and you can top like a sandwich or just cream cheese, cheese spread. Same goes for Pita bread - makes a great "pocket" for Tuna Salad etc.
Just avoid anything with too much of a runny sauce or salad dressing - it might leak and make everything soggy.
We also like sliced kielbasa/polish sausage or proscutto ham with crackers and cheese - just slice and go.
BBQ chicken is good cold too and if you want to get really fancy you can put it on skewers with veggies.....bring some ranch or BBQ sauce of topping or dipping.

I've got the best recipe for you!

2 tubes sausage
2 blocks cream cheese
2 pkgs refrigerated crescent rolls

Brown sausage until crumbly. Drain and mix together with cream cheese. Spray a cake pan (9x13?) and unfold 1 pkg crescent rolls onto bottom, spread evenly to make a bottom crust. Put sausage/cheese mixture on top of this and use remaining pkg of rolls to make top crust. Bake at 375 until rolls are done. Cut into squares. It's great hot or cold... and travels very well.

You can also add other ingredients such as drained Rotel, scrambled eggs, etc. when not traveling. Good luck!

Potato Chips, cookies, crackers? Not the healthiest foods, but it's the best I could come up with. There are baked chips and low fat crackers though. You could also try beef or turkey jerky and trail mix.
