We are not going to hire any catering company, my husband and I will do everything. I though that to make things easier we might just do appetizers. Any good recipes for these?? Or maybe any easy and tasty entree. I need help. THANK YOU!!!!

The most simple elegant meal for this occasion is.....
Boiled shrimp(u-peel-'ems): Follow instructions on Zataran box. Very simple. Cook in the morning and refrigerate. 1/2 lb. per person. Use medium (20 to 25 shrimp per pound) to large (10 to 15 shrimp per pound) size.
Salad: Butter lettuce! (not broken up too small), thin sliced cucumbers (put in bowl of salted water in fridge until ready to serve, will crisp), tomato wedges, greek olives, fetta cheese, Italian dressing (package kind) (add/toss after adding cucumbers, just before serving).
Homemade garlic bread: Slice bakery French bread, melt 1 1/2 sticks butter and add (3 or 4) fresh garlic (garlic press or minced), dip each slice (one side) in melted butter, put back in loaf shape, trickle top with olive oil and sprinkle top with garlic salt/dipping spice. Cover lightly with foil and bake in 350 oven about 10 or so minutes until heated throughly.
Serve with lemon wedges, coctail sauce.
coctail sauce:
1 bottle chili sauce
1/3 cup fresh lemon juice
3 TBS. prepared horseradish
1 TBS. Worcestershire sauce
1/4 tsp hot sauce (Tabasco)
Make in the morning so flavors can marry.
This is a simple meal we make for guests who visit our island and they act like they are dining with the Queen of England!
Your basic relish/veggie tray with Ranch dip will be appetizer enough.
Set a lovely table with a floral center piece and candles. You can set the table the day before. The point is to make it elegant yet simple so you have more time together on your special day.

(serve it on a bed of rice, with a green salad and warm rolls)

Go to Culinary Chef at http://www.culinarychef.com for recipes, and special occasion menus. Culinary Chef also has a menu service where they can create a special menu for your special day, including recipes and step-by-step preparation guide. That service does cost a minimal fee, but it is well worth it.

Lamb-Kabobs :) Braise the lamb, add mushrooms, bellpepper and onion. They're good for hours d'ovres, or entrees :)
