Make Grilled Chicken with Pesto. This is so simple
Go to the store and get a dry packet of Pesto sauce mix(its with the dry marinades and dry gravy mix) on the back it will tell you everything you need to make it and how to make it.

Grilled chicken breast goes best with pesto, you can either cut it up or leave it in whole pieces. Cook your noodles and remember to put salt in your water and noodles because its the only time you get to season them. While the noodles are cooking prepare you pesto sauce, just follow the directions on the back of the packet. After the noodles are done, drain them and put back in cooker then add sauce and toss to coat all the noodles(save back about 4 table spoons of sauce). Make sure you have enough sauce. one packet should be enough for a half pound of noodles. Now layer your noodles on a plate and place your grilled chicken breast on top then drizzle 2 of the leftover table spoons of sauce over the chicken. Serve with a garden salad and some kind of bread, if you both like garlic bread then go for it. If both of you eat it neither of you will smell it on each other

Easiest way of all is to dice chicken and cream of chicken souop for the sauce. cook the noodles drain but not to dry add chicken soup not diluted and stir well then add the chicken and mix lightly. If you boil your own chicken then cook the noodles in the chicken water. toast two slices of bread rather dark then crush and sprinkel on top. I like noodles and macaroni and eat a lot of it. A nice green salad with a very light dressing to go with it. Mint tea after dinner and then retire to a good movie with a nice white wine. Can i join you tonight. No I guess it is dinner for two this time.

Cook noodles; salt, pepper, grill & cut boneless chicken breasts; frozen veggies (whole string beans, baby peas & baby carrots).

Very simple sauce: melt about 3 pats of butter in a pan over med flame. Saute a tablespoon of garlic and some good quality dried Italian seasonings for approx 2 minutes. (If you have time to chop fresh, get parsley, oregano & basil and use instead.) Don't let the garlic burn. Add about 1/3 cup of white wine (chardonney). Salt and pepper to taste. Turn flame down to low. Add cooked noodles, chicken & frozen veggies to larger pot and pour the butter/wine sauce over it. Toss to coat and let simmer on very low flame for about 15 minutes. This will cook the veggies just right and let the flavors blend.

Serve with a small mixed salad (get the bagged type from the market), Italian bread, (Warm the bread in the oven to give it a fresh baked feel.) and wine.

Dessert: chocolate dipped strawberries.

Have fun!

Chicken scampi

Grill the chicken( boneless/skinless breast), and slice it into strips (under cook it, you will finish it later in the pan)
slice into strips and core an orange bell pepper,
Get a pan nice and hot with olive oil,put your chicken and peppers in it, for about 2 1/2-3 minutes. Put a table spoon of fresh garlic in the pan, do not let it get to dark of a brown color, just a tan color. Add 1 cup- 1 1/2 cups of white wine. Reduce till it's mostly gone, add 2 cups of chicken stock and juice from 1/2 lemon, toss with 1 1/2 lbs of cooked linguine, plate, top with a hand full of fresh ground Romano cheese, and chopped parsley.
This should get you oral at least twice this week!! Good luck.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

This is one of my favorites, from Epicurious.com. It's very simple, and feel free to use skinless chicken breasts. Since it's just the two of you, I'd recommend halving the reciepe. Serve chicken and sauce over pasta of your choice.

ITALIAN CHICKEN WITH MUSHROOM-AND-WINE SAUCE

6 large chicken breast halves with skin and bones
4 tablespoons olive oil
1 pound mushrooms, thickly sliced
2 cups chopped onions
1 large red bell pepper, cut into 1-inch pieces
1 cup dry white wine
1 cup canned low-salt chicken broth
1 1.42-ounce package spaghetti sauce seasoning mix

Preheat oven to 350°F. Sprinkle chicken with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add 3 chicken breasts, skin side down; sauté until skin is brown, about 3 minutes. Transfer chicken, skin side up, to 15x10x2-inch glass baking dish. Repeat with remaining chicken.

Heat remaining 2 tablespoons oil in same skillet over medium-high heat. Add mushrooms, onions and bell pepper. Sauté until vegetables are tender and mushrooms begin to brown, about 12 minutes. Add wine; boil 2 minutes. Add broth and seasoning mix and bring to boil. Pour sauce over chicken.

Cover dish with foil. Bake chicken 25 minutes. Uncover and bake until chicken is cooked through and sauce thickens, about 15 minutes longer.
